VEGETABLE PAYS

(PECEL SAYUR)

Material :
1. 4 long bean spindles, cut and boiled
2. 100 grams of bean sprouts, brewed
3. 4 pieces of cabbage, sliced roughly, boiled
4. 100 grams of carrots, cut long, boiled
5. 1 bunch of spinach, boiled
6. Peanut sauce:
7. 250 grams of peanuts, roasted and mashed
8. 400 ml of hot water
9. 1/2 tablespoon juicy tamarind water (from 1/2 teaspoon acid and 1/2
tablespoon water)

Ground spices:
1. 4 pieces of curly red chilli, fried
2. 2 pieces of red pepper, fried
3. 3 cloves of garlic, fried
4. 1/2 teaspoon of shrimp paste, burnt
5. 2 cm kencur
6. 1/2 teaspoon salt
7. 1 teaspoon brown sugar

How to make :
1. Stir well the finer spices and peanuts. Enter the hot water and tamarind a little
water, stirring evenly.
2. Prepare the vegetables in a container. Pour vegetables with peanut sauce on
top of it. Sprinkle with fried onions.
3. Serve the vegetable pecel with rice or ketupat and side dish of fried tempeh
rempeyek and crackers.
PECEL SAYUR

Bahan :
1. 4 lonjor kacang panjang, dipotong dan direbus
2. 100 gram taoge, diseduh
3. 4 lembar kol, diiris kasar, direbus
4. 100 gram wortel, dipotong panjang, direbus
5. 1 ikat bayam, direbus
6. Bumbu Kacang:
7. 250 gram kacang tanah, disangrai dan dihaluskan
8. 400 ml air panas
9. 1/2 sendok makan air asam jawa (dari 1/2 sendok teh asam dan 1/2 sendok
makan air)

Bumbu Halus:
1. 4 buah cabai merah keriting, digoreng
2. 2 buah cabai rawit merah, digoreng
3. 3 siung bawang putih, digoreng
4. 1/2 sendok teh terasi, dibakar
5. 2 cm kencur
6. 1/2 sendok teh garam
7. 1 sendok teh gula merah

Cara Membuat :
1. Aduk rata bumbu halus dan kacang tanah. Masukkan air panas dan air asam
jawa sedikit-sedikit sambil diaduk rata.
2. Siapkan sayuran dalam wadah. Siram sayuran dengan saus kacang diatas
nya. Taburi dengan bawang merah goreng.
3. Sajikan pecel sayur dengan nasi atau ketupat dan lauk tempe goreng
rempeyek dan kerupuk.
