Grandma’s Perogy Recipe

Dough Ingredients
 5 cups of flour
 ½ cup of instant mashed potato flakes
 1 tbsp of salt
 ½ cup of Crisco oil
 2 cups of boiling water
Directions
1. Mix (well) dry ingredient together
2. Mix oil & water together (separate cup)
3. Add wet ingredients to dry
4. Stir with a wooden spoon until cool enough to kneed
5. Kneed until smooth (about 10min)
6. Oil lightly
7. Cover with a damp tea towel
8. Let sit for 30min

Potato Filling Ingredients/Directions


1. 7-8 lbs Russet potatoes (way too much)
2. ½ cups of butter
3. Old cheddar cheese, finely grated to taste
4. Salt (to taste)
5. White pepper (to taste)
(mash above together)

Cottage Cheese Fillings Ingredients/Directions


1. 2 medium tubs of dry cottage cheese
2. Salt (to taste)
3. White pepper (to taste)
4. 2 whole eggs
Beat eggs together, add to cottage cheese, salt/peper & mix well

Cooking
1. Bring water to boil
2. Add oil
3. Cook for approx. 3min
