Lemon Coconut Cupcakes

1/3 (2.75 oz.) cup butter


2/3 cup sugar
2 eggs
½ teaspoon grated lemon peel
1 ¼ cups cake flour
2 teaspoon baking powder
½ teaspoon salt
3 tablespoons lemon juice
2 tablespoons milk

Directions:

1. Thoroughly cream butter and sugar.


2. Beat in eggs and lemon peel
3. Sift dry ingredients; add alternately with lemon juice and milk
4. Bake in oven (350) for 20 to 25 min
