Dessert: Holiday Fruit Salad

Ingredients:

500 Grams - fruit cock tail

100 Grams - Nata de coco

500 ML - All Purpose cream

800 ML - condensed milk

Equipment:

1 – Big mixing bowl

1 – Ladle

1 – Container

Procedure:

1.) Drain the juice of the fruit cock tail and nata de coco after you drain it put it on mixing bowl.
2.) Combined the all Purpose cream and the condensed milk in the mixture of fruit cocktail and the
nata de coco, mix it well
3.) After mixing it put the salad in container and put it in the refrigerator for 24 hours

Yield:

Preparation time: 1 hour

Serving: 5-6
Main Dish: Roast chicken

Ingredients:

1 - Whole chicken

1000 ML - pineapple juice

1 - star anise

2 - strips of lemon grass

½ CUP- Garlic minced

1 - Whole onions slice

1 TABLESPOON - ground black pepper

Equipment:

1 mixing bowl

1 baking tray

Procedure:

1.) Put the chicken in a mixing bowl, together the pine apple juice and star anise. Soak for 24 hours
and put it on refrigerator.

2.) After 24 hours of soaking remove the chicken in the mixture, and place it in the tray, put inside
the chicken the lemon grass, garlic, onions, and ground black pepper.

3.) Put the chicken in the oven for 350F in 1 hour and 30 minutes, and then served

Yield:

Serving: 5-6

Chicken Garlic Soup
Ingredients:

¾ Kilo grams - chicken breast

1 ½ Cup - garlic minced

¼ Cup - slice onions

2 Tablespoon - salt

1000 ML water

½ Cup - All Purpose flour

5 Tablespoon - garlic powder

1 Tablespoon - white pepper

Chopped parsley for garnish

Equipment:

1 knife

1 chopping board

1 large stock pot

1 wire whisk

1 skimmer

Procedure:

1.) In stock pot put the chicken breast, garlic, onions, salt, and water, boil it in a medium heat in 1 ½
hour.
2.) After you boil it using skimmer remove chicken breast, garlic, and onions.
3.) And gradually add flour in stock, and mix it with wire whisk until become thick.
4.) Add the garlic powder and white pepper mix and boil for 1, minute, and then served, garnish it
with chopped parsley

Yield:

Serving: 8 – 10

Appetizer

Fried Calamari
Ingredients:

¼ Kilo gram - squid rings

1 Table spoon - dried basil

2 Table spoon - Paprika

2 ½ Cup - flour

2 Table spoon - Baking soda

1 ½ Cup - water

500 ML - Water

500 ML - oil for frying

1 Table spoon - slice spring onions

Equipment:

2 mixing bowl

1 wire whisk

1 tongs

1 medium stock pot

1 knife

1 chopping board

3 serving plate

Procedure:

1.) Seasoned the squid rings of salt and pepper to taste, and add basil and paprika
2.) Mix the flour and baking soda with wire whisk, mix well and seasoned of salt and pepper to taste
gradually add the water, until the mixture become thick.
3.) Heat oil in a medium size of stock pot.
4.) Coat the squid rings in flour mixture , make sure cover the squid rings
5.) Fry the squid rings in oil, do not over crowd when frying , fry until golden brown, and then
served, garnish of spring onions.

Serving: 2-3

Caramelized Chicken Wings
Ingredients:

3 LBS - chicken wings

2Tablespoon - Olive Oil

1 ½ Cup - soy sauce

2 Tablespoon - Ketchup

1 Cup - honey

1 ½ Cup- Garlic clove, minced

1 - Pinch salt

1 - Pinch ground black pepper

Equipment:

1 baking tray

1 mixing bowl

1 spoon

Procedure:

1.) Preheat oven to 375F


2.) Place chicken in 9x13 baking tray
3.) Mix the oil, soy sauce, ketchup, honey, garlic, salt and pepper and flour over the chicken
4.) Bake at 375F for one hour until sauce is caramelized.

Yield:

Serving: 1-2

Preparation time: 1 ½ hoour
