Introduction

Cassava is a domesticated species of tuber, a root crop. Cassava is now a primary calorie source in
tropical regions. It is considered as the sixth most important crop-plant worldwide. It was domesticated
some 8,000-10,000 years ago in southern Brazil. The process of domestication improved the size of the
tubers.

Compared to other Asian countries, Philippine cassava industry is smaller. Cassava is mainly use as food,
dried feed, and starch. Due to high carbohydrate contents, it’s one of Filipinos’ staple. It is known to
perform well even under unfavorable condition. It has a high productivity even under marginal climatic
conditions.

Cassava is the most widely grown root crops in Philippines. About 120,000ha of agricultural land is used
for cassava planting. Producing about 1.8 million tons of cassava roots each year. The principal cassava
growing areas are located in Mindanao region. Which accounts for 59% of area and 71% of production in
Philippines.

Cassava has several of advantages compared with other root crops. Due to high productivity, it results in
low material cost. Cassava starch has excellent agglutinant properties replacing expensive artificial
agglutinants. The potential disadvantages of cassava roots are their rapid perishability. Through simple
processing the disadvantages of perishability can be overcome.

We propose to design, evaluate and fabricate a cassava grater. Improving the process and time used in
traditional cassava grating. Making the grating process much simpler, safer and more hygienic. Exerting
minimal effort while lowering the time used in grating. Making the whole process more efficient with
high production rate.

Objective

The main objective of this study is to design, fabricate and evaluate a two-way powered machine with
interchangeable parts that can grate a cassava for increasing the speed and improving the hygiene in the
production of cassava based food products.

Specific Objective

 To design and fabricate a cassava grater with the following parts


a. Main Frame
b. Hopper
c. Grater
d. Discharge
 To modify the design of existing cassava grater machine improving the performance and making
it suitable for home use small scale while lowering the production cost of the machine.
 To promote hygiene with product processing.
 To increase the speed of grating cassava as compared to manual grating.

Significance of the Study

The result of the study gave benefit to the producers of cassava products especially for farm owners and
entrepreneurs. The processing unit could be of smaller scale use helping common family to encourage
cooking and ensure consumption of safe products.

The researcher took the benefit of having the knowledge in this study, and to other researchers; the
study serves contribution as a material reference for further studies.

Scope and Limitation

The scope of this study is limited to the design, fabrication and evaluation of the machine.

Definition of terms

Cassava- a root crop which is rich in carbohydrate.

Hopper- an opening through which cassava is admitted and contained into the machine for grating.

Grate- to break into small pieces by rubbing against something rough.

Discharge- serve as the exit for the grated cassava.
