Chapter 1

THE PROBLEM AND ITS BACKGROUND

This chapter presents the Introduction, Background of the Study ,Scope and

Limitation of the study, Statement of the Problem, Conceptual Framework and

Definition of Terms.

Introduction

In this study the researchers show you how healthy the foods are in

restaurants or fast food in Rodriguez Rizal, the researchers will show you how

healthy the foods are in restaurants or fast food in Rodriguez Rizal for pregnant

ladies, the researchers will show you if all the foods are qualified for all ages. In

this study the researchers will let you know if eating in the restaurants or fast food

can still be healthy, and how to eat healthy in restaurants or fast food.

This study will let you know how important the healthy food is, good nutrition

is an important part of leading a healthy lifestyle. Combined your physical activity,

your diet can help you to teach and maintain your healthy weight, reduce your risk

of chronic diseases like, heart disease and cancer.

In this study the researchers will show you or help you to find restaurants that

is located in Rodriguez Rizal that actually have some healthy options on the

menu for you to be healthy all the time. The researchers also did an informal

interview with those managers of the restaurants or fast food that is located in

Rodriguez Rizal, for this study.

Background of the Study

Healthy food is food marketed to provide human health effects beyond a

normal healthy diet required for human nutrition. Foods marketed as health foods

may be part of one or more categories, such as natural foods, organic

foods, whole foods, vegetarian foods or dietary supplements. These products

may be sold in health food stores or in the health food or organic sections

of grocery stores. In the United States, health claims on nutrition facts labels are

regulated by the U.S. Food and Drug Administration (FDA), while advertising is

regulated by the Federal Trade Commission. Several other countries provide

regulations on food labeling to address the quality of possible health foods, such

as Canada and the European Food Safety Authority. According to the FDA,

"Health claims describe a relationship between a food, food component, or

dietary supplement ingredient, and reducing risk of a disease or health-related

condition".

In general, claims of health benefits for specific foodstuffs are not supported

by scientific evidence and are not evaluated by national regulatory agencies.

Additionally, research funded by manufacturers or marketers has been criticized

to result in more favorable results than those from independently funded research.

While there is no precise definition for "health food", the FDA monitors and

warns food manufacturers against labeling foods as having specific health effects

when no evidence exists to support such statements, such as for one

manufacturer in 2018

Scope and Limitation of the Study

The study were limited to healthy foods options available in San Jose

Rodriguez Rizal in fast food outlets. The participants of the study were the

managers in any branch of fast food in Rodriguez Rizal who serves as the

participants of the study in identifying the healthy food options available in that

fast food outlet.

The fast food outlet that chose by the researchers are McDo, Jollibee, Inasal,

KFC.

The managers of each food outlet served as the participants of the

study.They specifically identified healthy food options being offered in their food

outlet.

Statement of the Problem

The study aims to determine the availability of healthy food options in fast

food outlets in San Jose Rodriguez Rizal. Specifically, it seeks answer the

following questions:

1.4 State of living

Conceptual Framework

The following framework was designed to illustrate the concept of the study. It

was composed of three frames, the input, the process and the output. These

three frames made the researchers more accessible in getting the information

needed. The study is about the availability of healthy food options in fast food

outlets.

The conceptual model as illustrated in Figure 1, showed the input which

consists interview guide as data instrument and managers of food outlets as

participants.

The process consists of the interview, data processing, data analysis and

interpretation of data.

Definition of terms

Availbility. The quality of being able to be used or obtained.

Healthy Food. Healthy eating means eating a variety of foods that give

you the nutrients you need to maintain your health, feel good, and have

energy.

Fast Food. food that can be prepared quickly and easily and is sold in

restaurants and snack bars as a quick meal or to be taken out.

Interview. a meeting of people face to face, especially for consultation

Interpretation. The act or result of explaining or interpreting something

Data Processing. a series of operations on data, especially by a computer,

to retrieve, transform, or classify information.

Data Analysis. The process by which sense and meaning are made

of the data gathered in qualitative research, and by which the emergent

knowledge is applied to clients' problems.

Participants. This refers to managers of food outlets that identified healthy

food options available in their food outlets.


Chapter 2

REVIEW OF RELATED LITERATURE AND STUDIES

This chapter presents the Foreign Literature, Local Literature, Foreign

Studies and the Local Studies.

Foreign Literature

Consumption of takeaway and fast food by young adolescents is no longer

confined to the developed countries; it has spread to the developing countries as

well. The culture of fast food consumption has replaced the traditional meal

among university students and is a great public health concern. Excessive

consumption of fast food is responsible for obesity epidemics and the cause of a

dramatic increase of obesity-related diseases (e.g. diabetes, heart diseases etc).

A cross-sectional study was carried out from March to April, 2013 among students

attending in four established private universities of Bangladesh situated in

Dhanmondi, Dhaka: Daffodil International University, United International

University, World University of Bangladesh, and State University of Bangladesh.

The aim of the present study was to examine the preference, prevalence and

pattern of fast food consumption among the students. The prevalence of fast food

consumption among those students was 98.5%, and 43.3% of their pocket money

was spent on its purchase. The important factors for the preference of fast food

include good taste, easy accessibility, increased convenience, and pocket friendly

in nature. Approximately 22% of the respondents mentioned that they

consumed fast food 4 days per week and more than one-fifth had the meal

every day. Fifty four percent of the respondents skipped their breakfast due to a

variety of reasons including class pressure and had fast food after finishing their

classes, either from varsity canteens or other fast-food outlets. Though 98% of the

students were well informed about the negative effects associated with excessive

fast food consumption, they were still profoundly addicted to it. Specific health

education programs, dietary guidelines and effective public awareness campaigns

could be initiated to address the unhealthy lifestyle of university students and

improve their health.

Local Literature

What’s the first thing that you’ll see on the table. We have burger, pizza,

spaghetti, and cake. Rarely will you see a vegetable salad or dip. Our food

obviously dates back to our childhood which we need to change. White rice, white

bread and potatoes are the most notorious for weight gain. What then shall we

eat? Focus more on vegetables, fruits and fish.

According to Joel Ventura San Agustin people are so attracted by the fast

food chains. Fast food chains uses their power of how their food smells like, a lot

of people like to eat in a restaurant or fast food chains for the reason of they won’t

be tired of cooking for their foods and you just have to sit and wait for your food to

be served in front of you.

Most, if not all, of our ailments comes from what we put inside our body.

There is no other way to lessen the incidence of these health problems other than

discipline, education and awareness. These generation needs to change for our

children to follow. It wont be easy, but it can be done.

But according to Dr. Grace Cruz, a demographer,“they still consider

themselves of good health, with 16 percent even giving themselves very healthy

self-assessment, while 26 percent said they are healthier than average”. In

addition, they also find their body weight as “normal” or “alright” while 20 percent

said that they feel they are too thin.

Foreign Studies

Obesity is currently a major public health issue in the United States (Flegal,

Carroll, Kit, & Ogden, 2012). Perhaps because of the limited success of

individual-level weight-control interventions, policy-level strategies targeting

environmental risk factor areas termed ‘obesogenic environments’ are on the rise.

Substantial research has focused on the lack of healthy factors in areas

known as ‘food deserts’; such a lack is considered a factor in poor diet and

increased obesity. Newer research has hypothesized that living in an area known

as a ‘food swamp’, with increased availability of unhealthy food, may be a more

important factor influencing dietary behavior. It is thus interesting to note that the

obesity epidemic in the United States has coincided with exponential growth in the

number of fast-food establishments and increased fast-food consumption.

Although fast-food consumption has been found to be a risk factor for obesity,

the association between the availability of fast food and fast-food consumption is

unclear, as there have been a limited number of studies performed on this subject.

Additionally, although some studies support the hypothesis that higher fast-food

availability is associated with poorer health behaviors or outcomes, others studies

do not confirm this pattern.

Local Studies

People generally get most of their food from either food retail venues, where

they buy foods to prepare and eat from home, or from food service venues, where

they eat away from home. Grocery stores, corner stores, and farmers’ markets

are examples of food retail venues. Restaurants (including quick serve), child

care facilities, schools, hospital and worksite cafeterias are examples of food

service venues.

Having healthy food available and affordable in food retail and food service

settings allows people to make healthier food choices. When healthy foods are

not available, people may settle for foods that are higher in calories and lower in

nutritional value. Thus, creating and supporting healthy food environments is an

important part of public health work.

There are many different strategies that can contribute to healthy food

environments. These include 1) providing incentives for supermarkets or farmers’

markets to establish their businesses in underserved areas; 2) having nutrition

information and caloric content on restaurant and fast food menus; and 3)

applying nutrition standards in child care facilities, schools, hospitals, and

worksites.
Chapter 3

RESEARCH METHODOLOGY AND PROCEDURE

This chapter presents the Research Method and Design, the Setting of the

Study, Subject of the Study, Procedure of the Study, Sampling Procedure,

Construction of the Instruments and Data Gathering Procedure

Methods of Research and Design

This study made use of Qualitative Research in order to attain it’s objectives.

Qualitative research is a scientific method of observation to gather non-

numerical data. This type of research refers to the meanings, concepts definition,

characteristics, metaphors, symbols, and not to their counts measures.

Qualitative research is a process of naturalistic injury that seeks in-depth

understanding of social phenomena within their natural setting. It focuses on the

“why” rather than the “what” of social phenomena and relies on the direct

experiences of human beings as meaning - making agents in their everyday lives.

Rather than by logical and statistical procedures, qualitative researchers use

multiple systems of injury for the study of human phenomena including biography,

case study, historical analysis, discourse analysis, ethnography, grounded theory

and phenomenology.

Setting of the Study

This study will be conducted in San Jose Rodriquez Rizal where in the

participants are the manager of the fast food chain outlet. The researchers

conducted this research to know the availability of healthy food options in fast

food chain outlets in Montalban, Rizal.

Rodriguez Rizal is first class municipality in the province of Rizal, Philippines.

It was former known as and is still commonly referred to as Montalban. According

to the 2015 census, it has a population of 369,222 people, making it the most

populous municipality in our country.

Subject of the Study

The subject of the study is to see the availability of healthy food options in the

past food chains, a lot of people prefer to eat in the fast food chains than to cook

their own food, so we made this study to see the availability of healthy food

options in fast food chains, and this study is designed to help people see the

availability of healthy food in fast food chains around them.

This study is dedicated for those people who always want to eat healthy

foods and for those who always want to eat healthy foods and for those who

wants to eat foods in fast food chains in this study we will let the people know the

availability of healthy food options, where they can find healthy foods in fast food

chains, casual them it will make them feel comfortable, knowledgeable and

confident about what they eat and where they eat.

Procedure of the Study

The researcher based the present study upon observation during their work

immersion which concerned about the availability of healthy food options in fast

food chain outlets. After determining the title of the study, the researcher created

the questioners to gather information or inputs needed in the study.

Upon the distribution and retrieval of the questioners, the results gathered are

presented, analyzed and interpreted. The results become the basis for knowing

the availability of healthy food options in fast food chain outlets.

Sampling Procedure

The participants will be selected according to the needs of the study. The

researchers will selectively choose them because they will help the researchers

to their study through answer the question that are related to study. The selected

participants are the mangers of McDo,Jollibee,KFC. The managers will be

chosen through purposive sampling. A purposive sample is a non-probability

sample that is selected based on characteristics of a population and the objective

of the study. Purposive sampling is also known as judgmental, selective, or

subjective sampling. (Crossman 2016)

Constructions of the Instruments

The researchers used questioners to gather data. It was used to determine

the availability of healthy food options in fast food chain outlets which will be the

basis for the customers who’s offering healthy food products even though they

are eating in just fast food chain.

Data Gathering Procedure

The researchers will conduct a personal visit to the fast food chains in San

Jose Rodriguez Rizal to give the Request Letter will be give by our PR III subject

teacher to ask permission to conduct an Interview to them. Interview will be

conduct to gather information.

After they approve the Request Letter, the researchers will ask the manager

some question that are related to the topic. After that the researchers will collect

all the information and proceed to the next step.


Chapter 4

PRESENTATION, ANALYSIS AND INTERPRETATION OF DATA

This chapter presents the Presentation, Analysis and Interpretation of Data

gathered by the researchers from the managers of selected fast food outlets.

Case 1

The researchers asked the managers of Greenwich, Mang Inasal,

Chowking if they are offering healthy foods, and here are their answer,

Greenwich: Yes, we are offering healthy foods.

Mang Inasal: Yes.

Chowking: Yes, we are.

Case 2

Based on case 1, since they are offering healthy foods, the researchers

asked the managers to enumerate/list down those healthy foods in their outlets.

Greenwich: Pizza, it contains vegies and cheese.

Mang Inasal: All of our foods are good in health because all product are

tested and produced by our RND.

Chowking: Serving pineapple juice, nakakaganda sa health, vegies, fish,

proteins it consist iron and well process, safe sya dahil bantay sya.

Case 3

The researchers also asked if what are the nutritional value that the

customer will get from the foods.

Greenwich: Puro gulay.

Mang Inasal: It makes satisfied the hunger and cravings.

Chowking: Iron, zinc, vitamin C, vitamin A, vitamin B and less fats,

pineapple less sugar.

Case 4

The researchers asked if the price of healthy foods that they are offering

are affordable.

Greenwich: Yes, it’s affordable of all ages.

Mang Inasal: Yes, very affordable and sulit.

Chowking: Yes, kase pwedeng divided kung ilan sila. May mga promos.

Case 5

The researchers asked if the food that they are serve cater all ages.

Greenwich: Yes, it’s cater all ages.

Mang Inasal: Yes.

Chowking: No, di kase nag kaconduct ng catering reservation here by,

balt order (maramihan) by client food lang ang handle.

Case 6

The researchers asked if the foods that they are serving is appropriate for

lactating women’s and pregnant ladies.

Greenwich: Pwede, hindi naman siya nakakasama lalo na sa mga

buntis.

Mang Inasal: Yes, even lactating and pregnant women can avail or eat

our products unless it is not prescribe by the doctor.

Chowking: Yes, well process naman lahat, priorities lahat senior and

buntis.

Case Analysis 1

The managers of the selected fast food outlet in San Jose Rodriguez

Rizal, are all offering a healthy foods in their outlet.

Case Analysis 2

The selected fast food chain outlet are offering healthy foods outlet.

Greenwich offers pizza which is contains vegetables and cheese. Also Chowking

served pineapple juice which is good in our healthy lifestyle, vegetables and fish

which is contains protein, iron and it is well processed. Mang Inasal offers a

healthy foods because all of their product are tested and produced by RND.

Case Analysis 3

The researchers also asked if what are the nutritional value that the

customers will get from their product. In chowking, the nutritional value that the

customers can get in their product is rich in iron, zinc, vitamin C, vitamin A,

vitamin B and less fats, pineapple less sugar.

Case Analysis 4

All of the selected fast food outlet were answered that their products are

affordable and some of them are offering promos to the customer.

Case Analysis 5

The researchers asked if the food that they are served cater all ages.

Mang Inasal and Greenwich answered yes, it is cater all ages. And chowking

answered no, because they’re not conducted catering reservation.

Case Analysis 6

All of the selected fast food chain outlet were answered that their

products are appropriate for lactating ladies and pregnant ladies.


Chapter 5

SUMMARY OF FINDINGS, CONCLUSIONS AND RECOMMENDATIONS

This chapter presents the Summary of Findings, Conclusions and

Recommendations of the study.

Summary of Findings

1. Base on the respondents they have a similar answer which is, they are offering

a healthy food on their outlets, and its contain a nutritional value that the

customer will get, and it’s satisfied their hunger and cravings. And also its cater all

ages. As well as their foods is appropriate for the lactating woman’s and pregnant

ladies owing to the fact that their food is well process, unless it is not prescribe by

the doctor.

Conclusions

1. Therefore, the researcher concludes that the fast food chain in San Jose,

Rodriguez, Rizal offers a healthy foods that caters all ages and also it’s

appropriate for the lactating woman’s, pregnant ladies and senior citizen. And

lastly their price is very affordable.

Recommendations

1. The researchers recommend this study to the customers or guest who thinks

or who search for the healthy and affordable fast food chains in San Jose,

Rodriguez, Rizal.
