Scientific Explanation - There are many factors Involve but mainly it’s due to the combination of air pressure and surface tension when you let go of the plastic everything starts to fall that reduces the air pressure inside the bottle the pressure difference between the inside of the bottle and the outside of the bottle supports the weight of the water, the surface tension also creates a seal between the bottle and the plastic, since air can’t get in, water can’t get out.
