Filipino Recipe: Kalderetang Manok

1 kilong manok, hiniwa ng katamtamang laki


1 lata ng liver spread
2 kutsarang bawang, pinitpit
1 katamtamang laking sibuyas, hiniwa-hiwa
1 tasang corn oil
1 siling pula, hiniwa-hiwa
1 maliit na lata ng tomato sauce
2 chicken buillion cube na tinunaw sa
2 tasang mainit natubig
½ tasang biskotso (bread crumbs)

Bahagyang prituhin ang manok. Igisa ang bawang atsibuyas. Ibuhos ang sabaw ng
buillion. Hayaang kumulohanggang lumambot ang manok. Idagdag ang liver
spreadat tomato sauce. Isunod ang siling pula. Kapag naluto naang lahat
ng sangkap,lagyan ng biskotso at timplahan ngnaaayon sa panlasa.ihain habang
mainit.

Chicken Adobo
Chicken Adobo braised in vinegar, soy sauce, garlic, and onions. Hearty and
delicious with a garlicky savory sauce, this classic Filipino stew is amazing with
steamed rice.

Ingredients

 2 large potatoes, peeled and sliced into rounds


 1/4 cup soy sauce
 1 head garlic, peeled and minced
 1 onion, peeled and sliced thinly
 1/2 teaspoon peppercorns
 2 bay leaves
 1/4 cup oil
 1 whole (3 to 4 pounds) chicken, cut into serving parts
 1/2 cup vinegar
 1 cup water
 salt and pepper to taste

Instructions
 In a bowl, combine chicken, soy sauce, onions, garlic, peppercorns, and bay
leaves. Massage onto meat and place in the refrigerator to marinate for about 30
minutes. Drain chicken well, reserving liquid.
 In a wide, heavy-bottomed skillet over medium heat, heat oil. Add the potatoes
and cook, turning as needed, until lightly browned and halfway tender. With a
slotted spoon, remove the potatoes and drain on paper towels. Remove excess
oil from pan except for about 1 tablespoon.
 Add chicken including onions, garlic, and bay leaves and cook, turning
occasionally until chicken is lightly browned.
 Add vinegar and allow to boil, uncovered and WITHOUT stirring, for about 3 to 5
minutes. This is very important to "cook off" the vinegar taste.
 Add the reserved marinade and water and stir to combine. Allow to a boil for 2 to
3 minutes. Lower heat, cover, and simmer for about 20 to 30 minutes or until
chicken is cooked through. Season with salt and pepper to taste.
 Add potatoes and cook until potatoes are tender and sauce is reduced. Serve
hot.

Lemon Pepper Pasta with Shrimp


Ingredients

 1/2 pound dry fusilli or medium-size twisted or tube-shaped pasta


 1 tablespoon olive oil
 1 pound medium-size shrimp peeled and deveined
 2 cups frozen chopped kale spinach, broccoli rabe or other greens
 1/3 cup dry white wine
 1 lemon
 1 teaspoon salt
 1/2 teaspoon coarsely ground black pepper
 1/4 cup basil pesto
 1/2 cup grated Parmesan cheese

Instructions

1. Cook pasta according to package directions.


2. While pasta cooks, heat oil over medium heat in a large nonstick skillet. Add
shrimp. Cook 2 minutes. Turn shrimp over.
3. Add kale and wine to pan; zest lemon directly into pan. Sprinkle with salt and
pepper and continue cooking 1 to 2 minutes or until shrimp are done.
4. Remove from heat. Drain pasta; toss with shrimp mixture, pesto and cheese.

Lemon-Arugula Pesto
Ingredients

 4 cups/12 oz. cauliflower florets


 2 tsp. vegetable oil
 4 oz. fusilli*
 2 cups/2 oz. arugula
 1 Tbsp./½ oz. lemon juice
 1 tsp. lemon zest
 3 cloves/¼ oz. garlic
 2 Tbsp. extra virgin olive oil
 1 cup/5 oz. frozen peas thawed
 4 tsp. grated Parmigiano Reggiano

Instructions

1. Preheat oven to 400ºF. Place the cauliflower on a baking tray, toss to coat
with the oil. Season with salt and pepper. Roast until softened and golden,
turning half way through cooking (about 30 minutes in total).
2. Bring a large pot of salted water to a boil. Cook the fusilli according to
package directions. Drain and reserve.
3. To make the pesto, place the arugula, lemon juice and zest, garlic and olive oil
in the bowl of a food processor. Pulse and scrape down sides as needed to
puree. Add a tablespoon of warm water, or more, to help bring it together, if
needed. Season with salt and pepper.
4. Toss the fusilli with the cauliflower, arugula pesto and peas. Taste and season
with salt and pepper if needed. Divide between 4 bowls and sprinkle with
grated Parmigiano.

Greek Pasta Salad
Ingredients

 4 oz. cavatappi
 3 tbsp. olive oil
 2 tbsp. red wine vinegar
 1 clove garlic minced
 1 tsp. Dijon mustard
 1 tsp. dried oregano
 1/2 tsp. honey
 1/4 tsp. each salt and pepper
 3 tbsp. chopped fresh parsley
 1 cup/5 oz. chopped cucumber
 1 cup/6 oz. chopped tomato
 1/2 cup/3 oz. chopped red pepper
 1/4 cup/1.5 oz. finely chopped red onion
 1/4 cup/1.5 oz. pitted and chopped kalamata olives
 1/4 cup/1.5 oz. finely crumbled feta cheese
 4 cups/4 oz. chopped or torn red leaf lettuce

Instructions

1. Cook cavatappi according to package directions. Drain and let cool


completely.
2. Meanwhile, in large bowl, whisk together olive oil, vinegar, garlic, mustard,
oregano, honey, salt and pepper until combined. Stir in parsley.
3. Add cucumber, tomato, red pepper, onion, olives and feta to bowl; add pasta
and toss well. Let stand for at least 10 minutes. Just before serving, toss with
lettuce.

Recipe Notes

 Serve with grilled chicken, fish, or pork tenderloin if desired.
