Air & Odour Management - Commercial Kitchen Ventilation (CKV) is

a fully integrated commercial kitchen exhaust and filtration solutions
company headquartered in Sydney.

We are the competence centre for commercial kitchen exhaust and

filtration products for the AOM Group of companies.

We know that the main project challenges to commercial kitchen exhaust

and filtration projects are:

Choosing the right exhaust equipment

Each project is unique with different partners, site specificities,

engineering and performance requirements, budgets and finally, different
types of cooking styles and methods.

AOM CKV is therefore a One Stop Shop Equipment Provider with a large
range of products to suit every commercial kitchen project’s needs.

Getting the system to perform

The project journey is a long one where margins for errors are small
and many stakeholders are involved. Stakeholders include the Engineer
who designs and specifies, the Contractor who orders, installs and,
commissions and finally, the End User who operates and relies on the
product day in day out to run a business.

AOM CKV has put in place a team for the whole project life cycle, which
includes our Project Design team, our Sales Managers responsible for
quality control and our Servicing Team. AOM CKV supports each project
stakeholder every step of the way.

Installation requirements

- A two (2) second contact time is required prior to discharge in order for the ozone to effectively mitigate odour
emissions within the exhaust duct.
- Ozone Generators should always be interlocked with the exhaust fan.
- The sensitivity to odour strongly varies between different people. If exhaust discharge points are highly
sensitive, it is recommended to prepare an Odour Impact Assessment study in order to define the
treatment requirements which will depend upon multiple factors such as local weather and dispersion
factors, distances to intakes and or odour receptors, intensity of the discharge, etc.

AOM INTAIR
Let the cooking intensity automatically command the filtration
equipment and the whole kitchen exhaust system

Improved energy efficiency of the kitchen exhaust

system
AOM INTAIR determines the cooking intensity
of appliances under a kitchen exhaust hood and
consequently commands filtration and ventilation
equipment. This can either be programmed as:
- Exhaust equipment ON as soon as cooking begins
and OFF when cooking stops
- Sequential equipment use with varying fan speeds
(using a Variable Speed Drive) and varying filtration
intensity.

Optimal use of ozone for odour mitigation

Therefore removing the risk of residual ozone
discharges at the discharge point since ozone
injection is tied to cooking intensity. Up to three
ozone generators can connected to an AOM INTAIR
system allowing for varying ozone injection up to
7500 l/s.

Improved usability of the kitchen exhaust systems

particularly in situations where multiple tenancies
AOM INTAIR installed in Hurricanes Caville are tied to one fan system. Up to three kitchen
Circle main kitchen exhaust hood exhaust hoods can be connected to one automated
system.

Easy to install and maintain with in-hood sensors

built into the AOM HC Series kitchen exhaust
hoods and all components are discrete and simply
connected using standard electrical cabling.

The risk of fires originating from a commercial kitchen exhaust system is important. In the past few years,
high profile restaurants have been subject to fires which have been reported in the press as per some of
these following examples:

equipment against the different cooking styles defined

their premiums.

in AS1668.2-2012.
The reasons behind the fires are relatively clear and are tied to a build-up of grease in the exhaust hoods
and ducting which is highly flammable and an ignition of the grease either through the cooking
equipment (flames, sparks) or by electrical contact points (fan).

Risks and requirements of filtration equipment

This will reinforce the capacity of Engineers to select
AOM Australia has stated the need to:

1. Ensure that preliminary grease filtration equipment complies to AS1668.2-2012 section E5

Kitchen Exhaust Hoods Incorporating Grease-Removal Filters. Hoods shall incorporate a device that
the appropriate equipment based on the requirements
of individual projects.
will impede the process of grease within the airstream in accordance with the following (a) Filter
media and holding frame shall be constructed of rigid material not deemed combustible when tested
in accordance with AS 1530.1 Which is why AOM has tested and certified our honeycomb filters to
AS1530.1.
