Lesson 1 - INTRO TO FOOD ADVENTURES & KNIFE SKILLS LESSON PLAN

Recipe: Pineapple Sauce


Muddy Brook – March 27th

Class Prep:
GROCERY LIST
● 2 Ripe pineapples (2 per class)
● 1 piece of fresh ginger root (about 2 inches)
PREP NOTES
 Prior to class prep the pineapples by cutting removing the skin and top
 Then cut them into large sections enough for each student to have their own section to cut.
 Bring sharp knife, helpful for “pre” cuts!

● 1 large bowl
● Compost Bin

Cut pineapple – 7 students

Group 2- 8 students
Supplies:
● 8 mats
● 6 knives
● 1 large bowl
● 1 small bowl
● Compost Bin
Jobs:
Cut Pineapple - 8 students

Stove Top Station:


Stovetop students will grate the ginger
● Ginger root
● Grater
● 1 cutting mat
● Electric Fry Pan
● Wooden spoon to stir
● Blender

Server Station:
● 17 bowls
● 17 spoons
Class Flow:
CIRCLE
- Name Game- Introduce yourself and think of a fruit or vegetable that begins with the first letter of
your name (try not to repeat any fruits or veggies). *don’t have to like what you pick!
- Question: What is one thing you can do to practice Kitchen Safety?
- This is a good way to introduce the FA rules, “We have created these Food Adventures Rules”
so we not only practice being safe in the Kitchen but also being well behaved in the classroom.
- Food Adventures Rules – Helpful to write them on the board (if applicable see if they can remember
the rules)
- No, Ewws, Yucks, or Gross!
- One Chance rules with the cooking tools – It is a privilege to be able to use different Kitchen
tools/utensils- If they are being used in any other way than instructed they will be taken away!
- When someone is talking everyone else is LISTENING (talking “piece”- when they are holding
the talking piece it is their turn)
- After the recipe is prepared, and everyone is served and we say “1, 2, 3 Bon Appetite” (a French
word for Enjoy your food or meal)
WASH HANDS AND BREAK INTO GROUPS

- Head Chef reads recipe
- Lesson talking points
● How to properly hold a knife (see video)
PREPARING THE RECIPE
- Students will practice their knife skills by cutting the fruit
- Place fruit in bowl and bring to the stovetop section
CLEAN UP AND BREAK INTO JOBS
- One teacher will work with stove top students – students will add cut pineapple, ginger, to electric
skillet and follow recipe.
- One teacher will work with other students: dishwashers/dryers, table cleaners, floor cleaner and
servers
