We aim to share Japanese cuisine and culture with other
cities of the world—especially with those that don’t have a
strong presence of authentic Japanese culture and cuisine.

We chose Portland to be our first location outside of Japan


because its ecosystem produces the same beautiful water
(a key ingredient in our ramen) to that of our Japan locations.
This water quality combined with the bounty of Pacific
Northwest local farms & producers allows us to create the
