Proposal for a school canteen based on healthy eating

Mission statement 5
1 We aim to help students develop healthy eating habits by providing nutritious
meals and snacks that are attractive to them. Our healthy canteen will encourage
students not to be afraid of trying food which can be healthy and tasty at the same
time.
Rationale 10

2 Apart from the obvious negative effects poor nutrition can have on children’s
health, eating junk food can have an adverse effect on children’s abilities to
concentrate, study and socialize with their peers. The UK Soil Association found
that students who eat fresh, unprocessed school meals have better concentration,
improved attention spans and are less likely to be hyperactive. They also show 15
better learning capabilities and are less likely to be absent from school. It is,
therefore, important for schools to make sure that healthy alternatives to junk food
are being served in the canteen.
Operation of the canteen
3 Our canteen would work closely with all those associated with the school, 20
including teachers, parents and students. We plan to have a Canteen Committee
comprising all of the above. They would meet once a month to review the quality
and provision of food in the canteen as well as devise a strategy for the month
ahead.

A survey would be conducted at the end of each term to get feedback from
students. This would give us ideas about new recipes, meal deals and even ways of
naming food items. The survey would be handed out with every lunch order, with
a prize given to a random winner to encourage students to complete the
(4) . In this way, students could feel that they are involved in the canteen

and that their opinions are valued.
5 We also plan to hold cooking workshops for parents to give them ideas about how
to make healthy food at home. In these workshops, they would learn where to find
fresh ingredients and how to make delicious, healthy meals. All parents would be
given a recipe book to take home.

6 Students are more likely to buy healthy food which is presented well. In addition
to promoting specific food items, we also see our role as changing the way in
which students think about and choose their food. We want to encourage a culture
in which students are keen to try healthy food that is unfamiliar to them. In order 40
to do this, it is essential that food is presented in an eye-catching and mouth-
watering way. Food and drinks would be given catchy titles. We want to describe
the texture, temperature and taste of the food on our labels. For example, ‘tasty hot
toasted sandwich with melted cheese’ sounds far more enticing than ‘toasted
cheese sandwich’. Some other examples are ‘super strawberry smoothie’, ‘yummy 45
spicy noodles’ and ‘seasonal salad drizzled with olive oil’.
Menu
7 The canteen menu would be presented on large boards throughout the canteen.
Bright attractive colours and a large font would be used, with smiley faces beside
healthy items so they could be easily identified. Menus would also be placed on 50
the tables so that students are free to read them while they are eating.
Theme days
8 We also plan to have theme days which are an effective way of trialing new
healthy options. Theme days could be linked to the school calendar. For example,
Sports Day could feature food items like ‘High Energy Italian Pasta’ or ‘Speedy 55
Noodle Soup’. According to our research, it is essential to plan ahead when
organizing a theme day. Firstly, we would speak to teachers to find out how they
would like to be involved in the theme day. The next step would be to organize a
brainstorming session with the Canteen Committee to think up some interesting
and healthy menu ideas which fit in with the chosen theme. Once a theme and 60
menu have been chosen, then it’s time to think about promotion. A catchy name
for the theme day is crucial, and after this has been decided, posters, meal tickets
and appealing names for the food could be devised. The final steps are to decorate
the canteen and make sure we have enough food to meet demand.
Choice of food 65

Snacks and drinks


9 Growing children need snacks to keep their energy levels up during the day.
(11) , traditional snacks like chocolates, crisps and ice cream are often high
in fat or sugar. We propose to have a variety of healthy snacks on sale. These
would include: savoury biscuits, fresh fruit, dried fruit, low-fat yoghurt and home- 70
made fruit and cereal bars. Unsweetened beverages such as natural fruit juice and
soya milk would also be offered.
Hot food and cold food
10 Hot food choices need to be filling and nutritious. The type and number of hot
food choices on the menu would depend on the season as many children prefer to 75

eat hot food in the colder months. We would offer different hot choices as weekly
specials. As well as traditional Chinese food, we would also offer a variety of
specialties from other countries like Japan, Italy and Mexico. In cases where
students are not familiar with a certain food, we would hold special tasting
sessions to encourage them to move out of their ‘comfort zone’ and try new things. 80
There would be more cold food available during hot weather. Cold food on sale
would include sandwiches and a variety of salad, including green salad, noodle
salad and fruit salad.
Pricing
11 Healthy options on our menu need to be competitively priced, while allowing our 85
canteen to cover costs. Meal deals (including a hot or cold meal, drink and dessert)
are an excellent way to include fruit, vegetables and dairy products in students’
diets. They are also an excellent way to reduce food waste at the end of the week.
12 To encourage healthy choices, we may reduce the prices of healthy options and
increase the prices of less healthy ones. We plan to offer value for money, by 90
offering a selection of filling and nutritious small items such as dried fruit,
corncobs and wholewheat toast, which children could spend their small change on.
We would reduce the price of a food item at the end of a week to increase its
popularity if it has been a slow seller.
Case study: Success College’s healthy canteen ‘Munch and Lunch’ 95
13 We have been working closely with our sister school, Success College. We used the
school’s healthy canteen as a case study, and have included a summary of their
achievements in this proposal.
14 At the beginning of September in 2008, Success College decided that they wanted
to completely change the way their canteen worked, by removing all junk food and 100
serving only healthy alternatives. A committee consisting of canteen staff, teachers,
parents and students was formed to make plans for a new canteen called ‘Munch
and Lunch’. Their proposal was accepted by the school’s governing body at the
beginning of 2009. By mid June, the new canteen was up and running. In a
newspaper interview, the Principal of the school Mr Lam said that the new canteen 105
had been embraced by all the students. ‘We’ve changed students’ eating habits for
the better. They’ve taken eating healthily like ducks to water! I highly recommend
that other schools look seriously at the way they provide food for their students as
the benefits of healthy eating are so huge.’

15 I recommend that we go ahead with this proposal as I believe the healthy canteen
will be a good way to convey the message of healthy eating to students. It will
provide a supportive environment and atmosphere for consumption of healthy
food, thereby cultivating healthy eating habits in students.
