INTRODUCTION

Sugar and Honey make food sweet but they have different taste and texture.
Most of the Filipinos love sweet foods especially in some meal dishes, snacks, etc.
There are few people who use honey in any food they eat. They didn't know that honey
is much better than sugar.

In Filipino cuisine, sugar is everywhere. Lots of Filipino dishes contain sugar, like
Adobo, Afritada, Cameron, Chicken Pastel, etc., but there are some who didn't know
that too much sugar may affect our health. It can make one experience Low Energy,
unexpected bloating, weakened immune system, insomnia, weight gain, etc., but the
most common is Diabetes which can lead to death. There is one ingredient that can be
used instead of sugar and that is Honey because it contains nutrients that sugar doesn't
have.

BACKGROUND OF THE STUDY

Honey is a good source of flavonoid which has been reported to have medicinal
qualities. Because of this, honey can be a healthier alternative than sugar. Hence this is
why some recommend to use honey instead of sugar in their diet not only it can reduce
gain weight but it can also be used as moisturizer and is also good for chapped lips as
well.

This study aims to emphasize that honey can become a substitute for sugar.
Honey is known for its versatility and beneficial uses with it being an organic material. It
is considered to be one of the best products nature has produced.

The researchers chose this topic to know if honey can be implemented in


traditional Filipino dishes instead of sugar and if it makes the dish better or will it just
taste the same. And also to know whether what would the people prefer if they tasted
the two same dish but one is cooked with honey and one is cooked with sugar.

STATEMENT OF THE PROBLEM

The researchers seek to find the respondents satisfaction with honey in Filipino dishes.
Specifically, the researchers seek to answer the following questions:

What is satisfaction of respondents to meals with honey?

What is the level of likeliness to use honey in dishes?

For the researchers to find out what will their reactions or comments without knowing

HYPOTHESIS

There is no significant difference between Filipino dishes with sugar and with
honey in terms of taste.

SIGNIFICANCE OF STUDY

The results of the study will be a great benefit to students, health instructors,
experimenting chefs, and future researchers. The results may help students be
enlightened when comes to honey as an alternative for sugar. Also this can help them in
their academic performance and add knowledge on how to consume it.

Health instructors can benefit to this study because the results may help the
health instructors hand out a healthier meal plan for the instructed patients when using
honey as a substitute.

Experimenting Chefs can greatly benefit from this because this study can help
provide information for chefs experimenting on dishes and evaluating flavor for a better
quality food service and a healthier plate.

Future researchers also benefit from this because this study can benefit future
researchers who will conduct the same topic or gather additional information.

SCOPE AND LIMITATION

The main focus of this project was to know whether honey really is better than
sugar only by taste because there are some consumers that have health conditions that
might get them to like honey more than sugar. There are also consumers that might like
honey because it helps a lot in their diet.

This study does not include foreign dishes because the researches will only be
focusing on Filipino viands. Non-UPHSD students will not be included as respondents
because this study will only be within UPHSD Las Piñas Campus. Flavored honey will
not be used in this study because it might interfere with the flavor of the dish.

DEFINITION OF TERMS

Honey- a sweet, sticky yellowish-brown fluid made by bees and other insects from
nectar collected from flowers.

Sugar- a sweet crystalline substance obtained from various plants, especially sugar
cane and sugar beet, consisting essentially of sucrose, and used as a sweetener in food
and drink.

Benefits- an advantage or profit gained from something.

Antioxidant- a substance that inhibits oxidation, especially one used to counteract the
deterioration of stored food products. A substance such as vitamin C or E that removes
potentially damaging oxidizing agents in a living organism.

REVIEW OF RELATED LITERATURE AND STUDIES

HONEY

Jo Lewin (2019), Honey is made from the nectar of the flower and saliva of the

bee which causes a chemical change that creates honey. When it comes to nutritional

value, honey has the upper hand against sugar, especially raw honey. Raw honey has

more vitamins, enzymes, and other nutrients. Unlike sugar, honey doesn’t raise your

blood sugar quickly. Though honey has more calories you only need a little bit of it

because it's so sweet. According to Antimicrobial properties of natural honey: A review

of literature (2011), Honey is a supersaturated sugar solution mainly comprised of D-

fructose, D-glucose, sucrose, maltose and higher sugars (-80% of solid mass). The

antimicrobial properties of honey have great potential for application in medicine as well

as in the food industry.

Honey has been around way before humans learned to farm and bake goods. It

was like a gift from the gods when honey was first discovered by humans because back

then fruits were the sweetest food they ever tasted. Harvesting honey was not an easy

task because they had to look for wild hives that were heavily guarded by bees.

Egyptians were the earliest apiarist in history and they created the first domesticated

beehive from old logs and tree trunks. In the mid-nineteenth century, a clergyman

named Lorenzo Langstroth revolutionized honey collecting by creating a “collective

hive” where a person can collect honey and not destroy the whole hive. It was based on

the idea of “bee space”, the space between each comb to effectively collect honey.

was in rock painting dating back 8000 years ago. They used smoke to drive off the bees

away and harvest the honey without getting stung but this also caused a lot of colonies

being destroyed. Honey has been around for a long time and has been discovered that

it doesn’t go off. Archeologists discovered a honeycomb buried with the pharaoh's tomb

and was preserved and still edible. Honey doesn’t only have a very long shelf life but it

has medicinal properties to heal wounds. Romans used to heal their wounds with honey

after a battle. (Healthhoney.com, 2014) By the time honey was discovered it already

has a lot of uses like offerings, for cooking, sweets and surprisingly it became like a

form of currency. Back then Israel was often referred to as "the land of milk and honey."

Mead, an alcoholic drink made from honey was called "nectar of the gods.". (Peggy

Trowbridge Filippone, 2019).

To describe the taste of honey is complex. One cannot simply say the collected.

It can be floral, fruity, smoky, woody, spicy, nutty and earthy. There is also honey that

has a pleasant smell and a pungent smell. The taste can also vary from its color, the

darker it is the bolder its flavor. The popular varietals of honey are clover, orange

blossom, and wildflower. To easily describe the taste of honey the UC Davis Honey and

Pollination Center has developed a “Honey and Aroma Wheel”. (Debbie Arrington,

2014). It is stated here that aging honey can lower the HMF value that is in the honey

Honey is not only delicious but it can be healthy for you. It has health benefits

that you may or may not know. Honey can nourish your skin and face, because of its

ability to moisturize and smoothen your skin. It is also a good source of antioxidant,

management. (Daltone-Ominde, 2019). Honey in the old days was part of the traditional

medicine but now call home remedies. Back then people have doubts about honey

helping in suppressing cough but the medicinal properties of honey are now stacking

up. Because of the viscosity, it helps suppress the irritation of the mouth and throat.

(Joanna Blythman, 2018). Honey has so many beneficial enzymes, vitamins, and

nutrients. When it comes to cooking you shouldn’t heat honey too much because heat

destroys all of these beneficial nutrients. You can heat on a pot but you should never

bake with honey because of the high temperature in the oven. (Aomi Coelho, 2014). In

the theory of "Using honey in coffee instead of sugar as an alternative. TRUE OR

FALSE" by Emily Laurence (2018), it is said that honey has some major pros in the

nutritional thickness column compared to sugar, like having vitamins B2 and B6, iron,

and manganese. B vitamins are crucial for giving the body a huge amount of energy.

The iron in honey is linked to increased cardiovascular health; the manganese has

antioxidant properties and can support bone health. Honey also has some antibacterial

properties, especially manuka honey. According to the theory of "Are sugar alternatives

honey available from farms and some health food stores do contain some health-

boosting trace minerals – niacin, riboflavin, thiamine, and vitamin B6 – those elements

make up around two 2% of honey’s total content. More than half of the product is pure

fructose (fruit sugar).

Filipino cuisine is a melting pot influenced by different cuisines all over the globe.

There are a variety of foods in the Philippines with it being Asian, European and also

American. The Chinese brought their cooking techniques and their food in the

Philippines, the same goes for the Spanish. Though Americans influenced the

Philippines with their staples like burgers, salads, and pies, the most important was their

technology. Refrigerators, microwaves, and ovens made cooking a whole lot easier for

the Filipinos (pinoy-cooking.com, 2019). According to unileverfoodsolutions.com.ph

(2019), that even at the beginning Filipino Cuisine never stopped changing its form, the

flavors kept changing vary to the newly added ingredients or if the chefs are keeping up

with the trends.

Filipino Food Online, The Philippines has a wide variety of dishes from breakfast

to dinner and also food to eat in between meals the Filipinos call “merienda”. Here are

some of the Philippines’ famous dishes, fish escabeche, monay bread, buko salad,

pandesal, pansit bam-i, mango float, saba con yelo, pinakbet/pakbet, minatamis na

saging, kare-kare, bistek, leche flan, champorado, humba, lechon manok, and pork

adobo. These dishes focus on being sweet, salty, and sour which are the flavors well

known in the Philippines.

STUDIES ON HONEY

Hesami and Haghighian (2018), Honey is not only being used in

food or diets for its beneficial health properties. Since it contains caffeic acid

phenethylester and artepilin C, with immunomodulatory, anti-inflammatory and

anticarcinogenic effects. So in conclusion honey can also be used for treating/mending

basic and moderate ailments/ injuries. According to Abbas, Ghozy, Minh, Hashan,

Soliman, Van, Hirayama, Huy (2019) study, honey is known to be helpful for

suppressing late-night cough but it is also proved that honey can also be a huge help

against bronchial asthma because honey can reduce the inflammation of the bronchial

tubes which allows the person to breathe more easily. It is said that honey can be also a

help to cure some diseases. Like for example diabetes using honey instead of sugar

can save you for having diabetes especially if you're diabetic. It can also help asthmatic

people, etc. (Ueer, 2019). According to Saeed Samarghandian (2017), honey can be

used as a nutritional product. Traditionally honey is used as a treatment for eye

diseases, bronchial asthma, worm infestation and different kinds of sickness. It consists

of anticancer, antimetastatic effect, anti-inflammatory and other ingredients that give a

supplement to cure diseases. It has a therapeutic role in treating diseases including

anti-microbial properties.

SYNTHESIS

The series of literature and study in this chapter discusses the relevant details

related to this study. Honey is a very versatile ingredient has more beneficial

components than sugar. It is harvested in beehives where people back then destroy the

whole colony just to collect it. These days’ honey can be commercially farmed thanks to

the invention of Lorenzo Langstroth. Honey through its years of uses was discovered to

be non-perishable and have medicinal properties that people back then use this to cure

wounds, illnesses, and sometimes diseases. For people to have these beneficial

properties in their bodies, they can either consume honey by itself or mixed it with their

food.

Filipino food is a melting pot of different cuisines all over the world which makes

this the best type of food for anyone to enjoy. Filipino cuisine always changes because

it is influenced by the Chinese, Spanish, American, etc. so there are different versions

of the same dish. Mixing honey in Filipino food doesn’t just make the dish healthier but it

can be easily loved by different nationalities all over the world because of its familiar

taste.

METHODOLOGY

RESEARCH DESIGN

This study used an experimental research design. According to Adi Bhat (2019),
“Experimental research is any research conducted with a scientific approach, where a
set of variables are kept constant while the other set of variables are being measured as
the subject of experiment. There are times when you don’t have enough data to support
your decisions. In such situations, you need to carry out experiments to discover the
facts. Experimental research can gather a lot of data that can help you make better
decisions”. The researchers will be conducting an experiment if the taste of a Filipino
classic would change if honey was used instead of sugar.

RESPONDENTS OF THE STUDY

The respondents of this study are the UPHSD Tech-Voc students. Preferably the
HE students will be chosen because of their experience and skills in cooking because of
their subjects. They will be the taste testers of this experiment to determine if there will
be a significant change in taste if honey is used instead of sugar in Filipino dishes.

DATA-GATHERING INSTRUMENT

The researchers will be using surveys to collect the necessary data. This helps the
researchers to know easily how will the respondents react to the 2 separate product.

DATA-GATHERING PROCEDURE

The researchers conducted a survey to the respondents after tasting the 2 subject food
so that they'll know what are the comments of the respondents will be.

The survey and the taste test will start around 1:30 pm and will end around 2:30 pm
