CHAPTER 1

1.1 Background

In this era society are more likely consume instant food than home made cook.
Society in this era are depending on the technology, most of them not knowing danger
of consuming instant food. They also don’t know the nutrient that contained on the
instant food. Some instant food not fulfill the nutrient that body needs.

Canned food especially canned fish is popular lately. Canned fish is instant food that
make consumer not wasting the time to cook food especially for consumer that have
to work and have busy schedule. Consumer just fry the canned fish and serve it, its so
simple. Canned fish also content some of nutrient for example protein, fatty acid and
micronutrient. But we don’t know about the content of canned fish that endanger for
our health. The process of canning is not always clean and higienis, sometime process
of canning can exposed by some of the substance. Process of canning in the canned
food that do by some factory of course fullfil the standard but some of them not
careful by some substance that can get in on the food. Some substance like Zn (Zinc),
Pb (Cooper), Hg (Mercury) can include on the food during process of canning. If
substance like Zn, Pb, Hg include on the food can cause toxic effect on the body
especially on liver, heart, and nervous system when we consume in excess, this
substances also danger on environment, it’s easy to spread around the environment.
So this journal will prove the substance that include on the canned fish in some place.

1.2 Statement of Problem

1. How canned food can content heavy metal?


2. What are the content of heavy metals in canned food that endanger body health?

1.3 Reason of choosing topic

I choose this topic because canned food are favourite food on the society, they like
canned food especially canned fish because it’s instant food. People nowadays doesn’t
want complex thing and prefer to choose simple thing that don’t waste their time
because they are busy people. But they don’t know the impact of consume canned
fish, how the process of canning, what are the content of canned fish. They just
choose whatever they want but don’t know the effect for their body.

1.4 Benefit of study

There are too many benefit to study what are the content on the canned fish. There
are:
1. More carefull when choose canned food
2. Not eat too much canned fish because it content heavy metal that affect to our
body
3. Factory more carefull when canning procees for prevent from heavy metal

2.1 Summarize

2.1.1 Journal “Content of Heavy Metals in Canned Sea Fish”

In this journal used 19 samples of canned sea fish in different places in Slovak
Republic to find content of heavy metal in canned sea fish. The aim of this journal
is to determine quantity of Cd, Pb, Hg and Cu samples, and the result between 19
samples, content of Pb are the highest concentration had an excess more than
200% and for Cd by almost 180%. This results are compared to with the limits
values the maximum levels (HPL) according to Codex Allimentarius SR.

2.1.2 Journal “Heavy Metal in Canned Tuna from Italian Markets”

This journal used canned tuna as sampel and it take from markets in Italia.
This journal research of the content heavy metal in canned tuna, the result of the
study showed that content of Pb in some sample was detected at the highest
concentration followed by Hg and Cd. But in some other sample content Hg are
highest.

2.2 Review
Depend on two journals that research about content oh heavy metal in canned
fish showed that heavy metal like Pb, Hg, and Cd are include on the canned fish
that sold in market or fish trader in Italia and Slovak Republic. The quantitiy of
heavy metal are diverse, some sample showed that Pb has highest concentration.
But some other sample showed that Hg has highest concentration. Heavy metals in
canned fish danger body health and can caused toxic if consume excess. Heavy
metals can contaminated on the canned fish from technological process during
process canning, but with the modern technological, contaminating heavy metals
can be reduced.
CHAPTER 3
3.1 Conclusion
The conclusion from two journals are canned fish in this era are popular but some
canned fish are not higienis and content heavy metal. Heavy metals can be toxic if we
consume excess and can endanger our body health, in this two journals are research the
quantity of heavy metal like Pb, Hg, and Cd. Heavy metals in some sample in Italian
Markets and Slovak Republic are proved positive and some sample showed that content
of Pb contamination highest and excess, it means that canned fish is not good for health
because content heavy metal. Heavy metal can contaminated on canned fish from
technological when process of canning, but with modern technology content of heave
metals can be reduced, and can reduce of risk of human health.

3.2 Implication
The research of heavy metals in canned fish can be applied on the research institute, so
the research institute can control process of making canned fish, and it can produce
canned fish in better quality.

3.3 Recomendation
The label on canned fish doesn’t report the Food and Agriculture Organization catch
area and fish species or factory who produced canned fish, just only the country where
the product is processed. I recommend that on the label in canned fish display the factory
who produced that canned fish, so when the canned fish content heavy metal, it need to
be held more research and that factory can get a warning.
