1.

0 INTRODUCTION

1.1 HISTORY OF SANDWICH

Every day we consume about as many sandwiches as we have people to eat them. The
sandwich is being the perfect food: portable, open to any interpretation and as simple or as
elaborate as the mood permits. The sandwich has a long history, but it hasn’t always been as
embraced in as it is now. It’s hard to imagine, but the sandwich was once thought of as a symbol
of a colonial past.

The sandwich as we know it was popularized in England in 1762 by John Montagu, the
4th Earl of Sandwich. Legend has it, and most food historians agree that Montagu had a
substantial gambling problem that led him to spend hours on end at the card table. During a
particularly long binge, he asked the house cook to bring him something he could eat without
getting up from his seat, and the sandwich was born. Montagu enjoyed his meat and bread so
much that he ate it constantly, and as the concoction grew popular in London society circles it
also took on the Earl’s name.

John Montagu was hardly the first person to think of putting fillings between slices of
bread. Montagu traveled abroad to the Mediterranean, where Turkish and Greek mezze platters
were served. Dips, cheeses, and meats were all “sandwiched” between and on layers of bread. In
all likelihood Montagu took inspiration from these when he sat at that card table. Montagu’s
creation took off immediately. Just a few months later, a man named Edward Gibbon mentioned
the sandwich by name in a diary entry, writing that he’d seen “twenty or thirty of the first men of
the kingdom” in a restaurant eating them. By the Revolutionary War, the sandwich was well
established in England.

Though the Montagu didn’t technically invent the sandwich, he gets the credit for making
it popular and in a way by naming it. In the book Sandwich: A Global History, author Bee
Wilson writes that people soon began ordering “the same as Sandwich,” which later was
shortened to simply ordering a “sandwich.”

The final layer in the history of the sandwich is thanks to Otto Rohwedder of Davenport,
Iowa, who in the 1920s invented the bread slicing machine. Rohwedder’s invention made life
easier for housewives the world over, eventually spawning the phrase “the greatest thing since
sliced bread”. Fast forward to the 21st century. Now the sandwich has its official name and its
pre-sliced bread.

1.2 CHICKEN & MUSHROOM GRILLED CHEESE SANDWICH

A chicken sandwich is a sandwich that typically consists of a boneless, skinless breast of


chicken served between slices of bread, on a bun, or on a roll. Variations of what many consider
a "chicken sandwich" include the chicken burger or chicken on a bun, hot chicken and chicken
salad sandwich. Grilled cheese is a simple dish with a lot of history. The ancient Romans
combined bread and cheese but it wasn't until the 1920's when the grilling was added. Now in
present day we are taking it a step further by adding mushrooms and special seasoning to
continue the evolution of grilled cheese.

Sandwiches are simple in the sense that the only rule truly have to follow to make a
sandwich is that we need to put something in between two slices of bread. But great sandwiches
constitute more than just an ordinary peanut butter and jelly. Great sandwiches balance protein,
dairy, vegetables, sauces and bread into a perfect food item. With Malaysians having such a
diverse range of culinary offerings to choose from, the humble sandwich doesn’t really rank high
on the list of our “sought-after” food. Most of us just go into a convenience store and choose
between an egg or sardine sandwich while wishing we had nasi lemak to eat instead. When we

do want to appreciate a great sandwich, it can get quite pricey, especially if we live in the city.
The selected sandwich type is chosen to show that sandwiches are balanced diet compared to our
local dishes and not necessarily need to be ‘boring’ as we used to have in egg and sardine
sandwiches. This project also intended in making at lowest cost possible so people can have a
‘grab and go’ meal.

2.0 PROJECT OBJECTIVE

2.1 PROJECT IMPORTANCE

Sandwiches are a no-brainer for grab-and-go food service. Not only do they package,
hold, and transport well, but they’re also hardworking menu staples that are popular with
customers and can be adapted to a variety of different tastes, and dietary preferences. In fact,
prepared hot and cold sandwiches are among the most frequently menued grab-and-go
selections. Sandwiches, in particular, are supremely versatile: They work for breakfast, lunch,
and dinner as well as snacks. They’re easy to adapt to vegetarian and vegan trends as well as
bold flavors and ethnic innovations. And sandwiches represent the ultimate in portability,
requiring nothing more than a napkin to fully enjoy.

Wrap sandwiches are popular because they do a particularly good job at containing all the
elements and allowing each bite to contain every ingredient; they’re also very neat. The main
objective of this project are:

 To provide healthy, balanced grab and go meal for busy commuters


 To prepare meal that is easy to eat with minimal effort without using cutleries
 To prepare cold or hot meal that can last for at least 8 hours
 To change the perception of customers that sandwiches are not only confined to
egg or sardine only
 To provide delicious and healthy sandwiches at affordable price

Mission  To prepare a wrap sandwich that can last for 8 hours for
busy customers to eat without cutleries

Justification  Many people in our country are busy with their hectic
lifestyle. With that in mind, they have very little time to
prepare themselves a healthy meal. This will lead them to
choose unhealthy alternative such as fast food as their
meal of choice because it is cheap and easy to get. This
project is aimed to change their perception by showing
them that they can have a healthy ‘grab and go’ meal with
affordable price.

Assumptions  The chosen customers/respondents have little or no time in


preparing meal and prefer to eat while moving.

3.0 PROJECT PROBLEM

3.1 TIME

Since the targeted customers go early for work, the sandwich must be prepared
beforehand. Ingredients pertaining for the sandwich preparation must be bought the day before.
Careful planning must be taken to ensure the sandwich are prepared on time as since the
customers moves for work sharp at 7 a.m., the sandwich must be distributed to them by the time
of 6.45 a.m. Sautéing of mushrooms and chicken is started as early as 5.00 a.m. Since that is the
part that took longer time to prepare the ingredients for the sandwich. The prepared sandwich
will last for around 8 hours and can be consumed when it is hot or cold later on.

3.2 LABOR

Because of the sandwiches prepared only distributed to 10 customers, very minimal


manpower is needed in making the sandwich. Ingredients necessary for sandwich is prepared the
day before making the sandwich. Hence, one person enough to make the sandwich for 10 pax.

3.3 FINANCIAL

The main cost in preparing the sandwich are involves buying ingredients like button
mushrooms, parmesan cheese, chicken breast and sandwich loaf. Other ingredients are readily
available in the kitchen and doesn’t require additional purchases. Although the main ingredients
are quite expensive for our local market, project manager able to secure fund by asking for
lending from parents and friends. They were paid back after the sales of the sandwich.

3.4 PREPARATION

Sandwich is the easiest meal to prepare. It doesn’t take much skill nor time to prepare.
But when sautéing the mushrooms, it must be done with medium low flame to ensure that the
mushrooms doesn’t burnt. Since butter and cheese used to prepare the sandwich, extra care must
be given when seasoning the sandwich as it will make it taste more salty. Wrapping also is easy
go process. The wraps are readily available at shops and can be used as napkins after finishing
the sandwich.

4.2 PLANNING DETAIL

4.2.1 Planning

This stage involves selection of suitable title for the project. Project manager after
discussion with lecturer will choose suitable menu or meal. This stage took place at the
college/institute.

4.2.2 Literature Reviews

Relevant literatures are used as reference to get the picture of sandwich making. Videos
from YouTube viewed to get an idea on how to modify the sandwich to suit local taste buds.

4.2.3 Menu Creation

Based on the knowledge gained from the literatures and videos, the project manager
proceeds to create the menu for the sandwich. In this stage, the project manager finalises the
ingredients that need to be used in making the sandwich.

4.2.4 Food testing

The prepared sandwich is tested for taste. Peers and family members were given sample
menu for taste. Their feedback is taken into consideration and necessary adjustments were taken
if there is any based on the feedback received.

4.2.5 Sales & Marketing

After all the necessary steps has taken, the sandwich is prepared and ready to be sold the targeted
customers. A simple signboard with details of sandwich and its price were placed near the sales
area to attract customers.

4.2.6 Data Collection & Analysis

Customers that buy the sandwich were given survey form for them to answer. The survey form
consists of multiple choice Likert scale questions. Customers have to tick only one answer for a
question. Their feedback will gathered and anaylised.

4.2.7 Presentation

After data collection and analysis, the findings are prepared in hard copy to be submitted for
grading. A slide presentation with sample sandwich is prepared to presented in front of
examiners.

5.2 RECIPE

Ingredients:

200g button mushrooms

4 slices sandwich bread (white or whole wheat)

1 large shallot, thinly sliced

Shredded Parmesan Cheese

2 tablespoons unsalted butter

Salt and pepper to taste

Half chicken breast shredded

Instructions:

1. Start by removing the stems from your mushrooms, brush them with a small amount of
oil or butter (and a dash of salt), and put on grill.
2. Wait until the mushrooms have begun to release their liquids, about 5 minutes.
3. Place mushrooms on cutting board and slice into long, thin pieces.
4. Heat pan and add butter.
5. When the butter is melted, add half sliced chicken breast on the pan.
6. Cook the chicken 5 minutes on each side.
7. Add salt and pepper to taste.
8. Once cooked, remove the chicken from pan and let it cool down.
9. Once cooled down, shred the chicken into small pieces.
10. Arrange the bread on a work surface and brush on both sides with the butter.
11. Divide the cheese slices among the 4 slices of bread.
12. Top two of the slices with the shredded chicken, mushrooms and sliced shallot.
13. Sandwich them together with the remaining bread.
14. Heat a grill pan over a medium-high flame and brush it with butter.
15. Grill each sandwich one at a time: cook the sandwich on the first side for 2 minutes,
pressing down with a spatula.

16. Rotate the sandwich 90 degrees and cook for an additional minute.
17. Flip the sandwich, and repeat on this side.
18. Remove the sandwich when the cheese is properly melted, and have nice cross-hatch grill
marks on the bread. Makes 2 sandwiches

customers/respondents, they were given a survey form to answer few questions regarding the
sandwich in term of taste, quality and appearance of the wrapping. The collected survey form
then analysed using author’s interpretation.

7.0 SUGGESTION AND DISCUSSION

In general it can be said that the Chicken Mushroom Grilled Cheese Sandwich is well
received by all the 10 respondents. The project is executed in good manner that the sandwich is
prepared on time before distributing to respondents. It is believed that this project shed light on
the respondents that sandwich is not boring as they thought and can be healthy alternative to the
meal they usually have. Since only 10 respondents were selected for this survey, it is suggested
that, more respondents should be included. This is to obtain reliable result of the product tested.
It also will give an idea of the locals preference for ‘grab and go’ meal. From that data obtained,
researchers will have clear picture on how to change respondent’s view of ‘grab and go’ meal
compared to fast foods.

8.0 CONCLUSION

Many people skip the breakfast meal because they’re rushing to get out the door. That’s a
mistake. We need food in our system long before lunchtime. If we don’t eat first thing, we may
get so hungry later on that we snack on high-fat, high-sugar foods. By introducing ‘grab and go’
meal, Chicken Mushroom Grill Cheese Sandwich, we can overcome this issue. Since it requires
no cutleries to eat and can be made quickly, this sandwich is a healthy alternative as an anytime
meal.
