Gluten-Free Oyster Crackers (AIP)

If oyster crackers are the highlight of chowder for you, then you will love
this recipe for an AIP-friendly version! Please note, these don't keep well.
Plan to consume them the same day you make them.

Ingredients
⅓ cup cassava flour (60 grams)
¼ cup arrowroot starch(35 grams)
¼ teaspoon salt
1 teaspoon AIP baking powder
1 teaspoon honey
1 tablespoon palm shortening
¼ cup cold water

Instructions
1. Preheat oven to 375° F.
2. In a medium bowl, combien cassava flour, arrowroot starch, salt, and baking powder.
3. Add honey and palm shortening and mix to distribute evenly, using your hands.
4. Pour in water and continue to mix with your hands, as if you were kneading bread. If mixture remains
very dry and crumbly, add more water until it is just wet enough that it holds together but is still very
firm.
5. Roll out between two layers of parchment paper until about ¼ inch thick. Transfer to a baking sheet.
6. Remove and discard top parchment paper. Use a knife to cut into small squares, but don't try to separate
at this point.
7. Bake for 13-15 minutes, or until lightly brown on top and crisp.
8. Remove from oven and allow to cool, then break apart into squares.
