Healthy Cookies

Seasoning Strategies
Soups, stews, sauces: Salt, lemon juice, vinegar. Dashes of acid go a long way.
Cold foods: Season aggressively. Chilling foods dulls their flavors. Normal amount of salt pre-chilling,
then add more as desired just before serving.
Herbs: Add hearty herbs (thyme, rosemary, oregano, sage) early. Save delicate herbs (parsley, cilantro,
tarragon, chives, basil) for the end.
Add umami: Adding glutamates via soy sauce, Worcestershire sauce, anchovies can boost savoriness of
a dish.
Flavor Notes
Salt can mask bitter flavors (e.g. salt in coffee, salted eggplant). Many medications are made more
palatable with salt.
Sugar can moderate spiciness. It also draws heat from the mouth when it dissolves in saliva, producing
a mild cooling sensation.
Temperature and Taste: Foods taste better hot! Dishes meant to be served hot should be reheated.
Dishes served chilled (e.g. gazpacho or potato salad) must be aggressively seasoned to make up for
flavor-dulling effect of colder temps.

Enzymes can be deactivated by blanching or brief boiling. Vegetables are often precooked before
freezing. Fruit can't be precooked, so manufacturers add sugar to reduce crystal size, limiting the
damage the crystals can cause. They may also add ascorbic acid, deactivating the enzymes that cause
browning.
Note: Why are ice cubes hard but ice cream is soft? Because sugar (or any substance that dissolves in
water) lowers the freezing point of water. More sugar means lower boiling point.

Best way: Use Science of Good Cooking recipe/method. Most importantly: Chill the
butter/flour mixture for 15 mins in freezer before adding buttermilk/yogurt, and make sure butter pads
are sliced thin and mashed out to nickel-sized pieces, evenly distributed and nicely rolled out during the
patting/folding process. In our oven, bake for 15 mins at 400 (which in reality is 425).
Corn Bread

Tips: Free to add salt to egg before cooking. Salt helps retain moisture! (Lots of confusion about
this point. Some people claim salt causes watery eggs. ATK and Seriouseats show it doesn't.)
Use ½ Tbsp butter. No oil.
Use moderate heat. Medium to medium low.
Use plastic fork.
Start scrambling as soon as egg hits pan. Shake pan vigorously whilst stirring pretty much
constantly.
Don't overstir. Your goal is a scrambled, creamy middle, and a done outside. You don't want to
scramble all the egg. Scramble some but leave a layer on bottom for the silky smooth exterior.
Take off of the heat to let exterior set a bit.
Fold using fork, spatula, tap pan if necessary, tip onto plate so seam is on bottom.
