(Real) Banana Pudding

https://www.seriouseats.com/2019/01/this-banana-pudding-turns-speckled-bananas-into-spectacular-
pudding.html

Seasoning Strategies

Soups, stews, sauces: Salt, lemon juice, vinegar. Dashes of acid go a long way.

Cold foods: Season aggressively. Chilling foods dulls their flavors. Normal amount of salt pre-chilling,
then add more as desired just before serving.

Herbs: Add hearty herbs (thyme, rosemary, oregano, sage) early. Save delicate herbs (parsley, cilantro,
tarragon, chives, basil) for the end.

Add umami: Adding glutamates via soy sauce, Worcestershire sauce, anchovies can boost savoriness of
a dish.

Flavor Notes

Salt can mask bitter flavors (e.g. salt in coffee, salted eggplant). Many medications are made more
palatable with salt.

Sugar can moderate spiciness. It also draws heat from the mouth when it dissolves in saliva, producing
a mild cooling sensation.

Temperature and Taste: Foods taste better hot! Dishes meant to be served hot should be reheated.
Dishes served chilled (e.g. gazpacho or potato salad) must be aggressively seasoned to make up for
flavor-dulling effect of colder temps.

Meat (General notes)

When freezing meat, biggest issue is moisture loss. Ice crystals damage cell structure, so frozen meat
loses more moisture when cooked than meat that was never frozen. It also causes moisture loss due to
surface dehydration.

Also, your freezer is exceedingly unlikely to be at a constant 0 degs. Foods are constantly warming up
and cooling down, which accelerates damage from ice crystals. Food that is encrusted in a layer of ice
crystals (freezer burn) has suffered the ravages of constant freezing, thawing, and refreezing.

Freezing (General notes)

When moisture in food freezes, it forms ice crystals. These crystals rupture cell walls and interal cell
organelles in fresh foods, releasing enzymes from their locked compartments, When thawed, these
enzymes cause produce to develop off-flavors and turn brown and soggy.

Meat

When freezing meat, biggest issue is moisture loss. Ice crystals damage cell structure, so frozen meat
loses more moisture when cooked than meat that was never frozen. It also causes moisture loss due to
surface dehydration.

Also, your freezer is exceedingly unlikely to be at a constant 0 degs. Foods are constantly warming up
and cooling down, which accelerates damage from ice crystals. Food that is encrusted in a layer of ice
crystals (freezer burn) has suffered the ravages of constant freezing, thawing, and refreezing.

Fruits and Veggies

Enzymes can be deactivated by blanching or brief boiling. Vegetables are often precooked before
freezing. Fruit can't be precooked, so manufacturers add sugar to reduce crystal size, limiting the
damage the crystals can cause. They may also add ascorbic acid, deactivating the enzymes that cause
browning.

Note: Why are ice cubes hard but ice cream is soft? Because sugar (or any substance that dissolves in
water) lowers the freezing point of water. More sugar means lower boiling point.

Eggs

Boiling: Only two factors matter when boiling an egg: time and temperature.

Kenji's hard-boiled egg strategy: Fast start, followed by slow-and-steady cook to the end. Peel under
cold running water.

Perfect scrambled eggs:

No milk!
Whisk just before panning
Whisk all the way (completely mixed, no egg white chunks)
Stir often, start stirring right away
Low heat!
Butter pad mid-cooking
Very little butter (or none) to start

Crepes

Egg and gruyere crepe: https://www.youtube.com/watch?v=73MaIX994LU

Maybe use some sugar in batter?
Notes: Crepe too thick to fold. Need one of those tiny flat doo-dads (pallet knife). Medium heat!
Too much batter in pan?
Make sure pan is hot! Medium or medium-high heat.
Not too much butter. Crepe should only take a minute or so to cook to a golden brown (not
veiny).
May help to chill batter (to give you a few extra seconds to coat the bottom of the pan before
batter starts cooking.)
2 to 4 Tbsp of batter in a 7 to 9 inch frying pan.
Pour batter into center of pan.
Can be stored up to 5 days in fridge.

crepes

MEDIUM-HIGH HEAT!!!

http://dish.allrecipes.com/make-best-crepes/

Ruhlman Ratio: http://ruhlman.com/2013/02/crepes-and-the-power-of-ratios/

2 milk, 2 egg, 1 flour (e.g. 64 oz milk, 64 oz egg, 32 oz flour for 2.3 crepes)
A large egg is about 25-26 oz. So 2 eggs is 50-52 oz. That means we need 50-52 oz
of milk and 25-26 oz flour.

Ruhlman's Ingredients:
4 lg eggs
8 oz milk
4 oz flour
1 Tbsp sugar (for sweet)
1/2 tsp salt (for savory)

Perfect crepes:
Use Ruhlman ratio
Only butter pan before first crepe!
Medium heat, or just below medium

For 18 five-inch cookies:

https://www.brit.co/chocolate-chip-cookie-recipe/
https://www.thatskinnychickcanbake.com/jacques-torres-secret-chocolate-chip-cookies/

Use Rachel Ray recipe.

Results: Cookies slightly burned on edges, not done in center.

Possible solutions:
Use a second pan on the lowest rack as a 'heat shield'.
Chill the pan in freezer just before baking. (Stage dough balls on parchment paper, slide
paper onto frozen pan just before baking.)
Allow pan to cool between batches.
Use light-colored pan.
Make sure dough is good and cold.
Possibly too much butter?

Tips: Free to add salt to egg before cooking. Salt helps retain moisture! (Lots of confusion about
this point. Some people claim salt causes watery eggs. ATK and Seriouseats show it doesn't.)
Use ½ Tbsp butter. No oil.
Use moderate heat. Medium to medium low.
Use plastic fork.
Start scrambling as soon as egg hits pan. Shake pan vigorously whilst stirring pretty much
constantly.
Don't overstir. Your goal is a scrambled, creamy middle, and a done outside. You don't want to
scramble all the egg. Scramble some but leave a layer on bottom for the silky smooth exterior.
Take off of the heat to let exterior set a bit.
Fold using fork, spatula, tap pan if necessary, tip onto plate so seam is on bottom.
