• Ingredient selection: Global Diets exclude ingredients that other
diets include. In the process, components that can affect research
results that are inherent in these ingredients of concern, such as
phytoestrogens, nitrosamines, cholesterol, mercury and other
contaminants, were also reduced or eliminated. We have reduced,
and in most cases eliminated, the set of ingredients of concern,
highlighted in red on the next pages.
