STEP ACTIVITY

1 WELCOME. The bartender / bar waiter is always in service, receives the


costumer with a smile and making visual contact, with a well-modulated voice
says “Good morning / afternoon / evening, welcome to the bar XXXX” (Within 1
minute of the guest having entered the bar, always in a happy mood).

2 PRESENT BEVERAGES MENU. The bartender /bar waiter presents the


menu making sure it is in perfect conditions. He hands the menu to the
guests always on their right side and stays attentive to courteously
answer the guests’ questions.

3 OFFER THE DAY’S BEVERAGE / SPECIAL. T h e b a r t e n d e r / b a r w a i t e r


e x p l a i n s t h e b a r ’ s s p e c i a l t y ). He offers the day’s special (selected from
the Mojitos / Martinis /Jamaican drinks). He presents the menu to the guests
saying: “My name is… I’ll be your waiter. Welcome, would you like to order
the day’s special Mojito /Martini?” (Mention the name of the drink and briefly
explain what it consists of.)

4 TAKE BEVERAGES ORDER. The bartender / bar waiter asks the guests if
they are ready to order their drinks before 2 minutes have passed,
after he handed them the menus. If the guest is undecided, he
immediately offers help and suggests drinks; always to Ladies first.

5 ASK IF GUESTS WANT ICE IN THEIR BEVERAGES. The bartender /bar waiter
repeats the order and confirms the guests’ “good choice.” He asks if they want
ice in drinks, which are not frozen or on the rocks. (All frozen drinks and drinks on
the rocks contain ice so the question is not required); thank the guests for their
order and withdraws.

STEP ACTIVITY
6 SERVES DRINKS: The bartender / bar waiter serves drinks before 3 minutes
have passed from the time when they were ordered, making sure that they are
the correct drinks and that they are properly presented using the appropriate
glassware, always carrying them on a bar tray (if serving away from bar).
Before serving the drinks, the waiter places glass coasters, taking the drinks by
the bottom third portion of the glass when serving them. In the case of the
house wine, it is served in front of the guest; it never leaves the bar already
served . Only frozen drinks are served with a straw; mixed drinks are served
with a stirring mixer. All other drinks are served neither with a straw nor a
mixer, and they aren’t offered; they are only served when requested by the
guests. The waiter says to guests,
“Enjoy your drinks” once they are served and before withdrawing.
7 SERVES DRY SNACKS. The bartender / bar waiter, once he has served the
drinks, automatically serves dry snacks with alcoholic beverages. Peanuts,
Pretzels, Pub Mix, Chips). Served in individual portions and provides paper
napkins to wipe their hands. The waiter remains attentive and offers more
snacks once they are not run out. The glass coasters do NOT apply to swim-up
bars. A bread plate is offered for skinned snacks.

8 OFFERS A SECOND DRINK. The bartender / bar waiter offers a se cond drink
once the first has been drunk to within a fourth of the capacity in each glass .
The drink is served within two minutes after the previous drink is finished; the
ashtray is changed every time a guest puts out a cigarette on it.

9 FAREWELL TO GUESTS. The bartender / bar waiter remains attentive to the


guests’ needs; once they decide to leave, the waiter / bartender approaches
them and says goodbye, thank them for their visit and invite them back.
Then, he verifies that the guests do not forget any of their belongings.

10 CLEANS TABLE / BAR. The bartender / waiter cleans the table or bar area that
was used, removing glasses and services used, insuring that it stays completely
clean and that its appearance conforms to the bar’s standards (clean ashtrays,
etc.),verifying that it is perfectly dry with no remaining snacks or any other
kind of trash on it.
