Dear Dra. Inumerable:

I am writing you today to reaffirm our meeting in your office regarding the delay on the issuance
of our sanitary permit. As I mentioned to you yesterday, we have already made all necessary
adjustments to address the excess smoke and smell eminating from our kitchen.

As per recommendation of your office, our sanitary permit will be released only upon issuance of
a mechanical permit. This however doesn’t make sense to me because the said requirements to
secure a mechanical permit is different from the requirements needed to secure a sanitary permit.
But who am I to argue if this is what your office wants.

You also mentioned that you will coordinate with the building department in doing a joint
physical inspection of our premises. I pray and hope that this will finally address all your
concerns so that our long overdue sanitary permit will finally be issued and released.
