FISH CEVICHE

Ingredients

 800 grams of chopped white fish


 1 ½ cup lemon juice
 2 red onions julienned
 1 chili pepper finely chopped
 2 tablespoons chopped cilantro (cilantro)
 Salt and pepper to taste
 4 boiled sweet potatoes for the garnish (optional)
 4 lettuce leaves for garnish (optional)
 4 cooked corn for the garnish (optional)
Preparation

1. In a bowl pour the lemon juice and season.


2. Add the chopped ají limo and cilantro.
3. Immediately afterwards, add the pieces of fish, let them cook in the
lemon for 10 or 15 minutes (the time may vary depending on the type of
fish used).
4. To plate, proceed to make a bed of lettuce, then add the fish cooked in
lemon and finally the onion. You can finish the dish with some pieces of
sweet potato or corn, as a garnish.

Cebiche secrets

 Among the ingredients that can be added to the ceviche, we find: ground
garlic, monosodium glutomate, celery, kion (ginger root), ground hot
pepper (to give it more heat), or evaporated milk (to lower the acidity of
the lemon). These ingredients are usually added to the lemon juice when
cooking the fish.

 In addition to corn and sweet potatoes, this recipe is usually


accompanied with toasted mountain pitch as a garnish.

 For the onion to lose its strong flavor, it is recommended that after cutting
it soak it for a few minutes in salted water
