Three ways to make royal icing K

1. Alton Brown’s classic royal icing K
This classic recipe uses egg whites and powdered
sugar to create a smooth, glossy icing.

Ingredients Directions
• Powdered sugar (4c) • In large bowl of stand mixer combine egg
whites and vanilla. Beat until frothy.
• Pasteurized egg
whites (3 oz) • Add powdered sugar gradually and mix on
low speed until sugar is incorporated and
• Vanilla extract (1 t) mixture is shiny.

2. Royal icing with meringue powder K
This simple recipe replaces egg whites with
meringue powder and water.

• Powdered sugar (4c) • Combine meringue powder and powdered
sugar in the bowl of a mixer.
