Carbohydrates

Carbohydrate
 Is a big group of organic compounds found in plant.
 Contain carbon, hydrogen and oxygen
 50-50% of the total energy supply by CHO
 Least expensive source of energy

Functions of CHO
1. Chief source of energy
2. Protein sparer
3. Regulate fat metabolism
4. Sole energy source of brain and nerve tissue
5. Storage form of energy as glycogen
6. Regulation of intestinal peristalsis and provider of bulk

Carbohydrate Malnutrition
*( Famine and prolonged starvation)
1. Protein Energy Malnutrition(PEM)-fatigue, decrease blood sugar level ,weight loss and
retarded growth
2. Obesity
3. Dental Carries
Recommended Intake of carbohydrates
50-60% of total calories should come from CHO

 Your rich sources of carbohydrate are starches and sugars.

 Starches:
 Rice and rice products (puto, suman, kutsinta, etc.)
 Corn and corn products.
 Other cereals:
 Bread and other bakery products.
 Rice flour (bihon) and other noodles.
 Starchy roots and tubers (kamote, gabi, ubi, etc.)
 Bananas
 Sugar:
 Table sugar
 Fruits, molasses, jams
 Preserves, jellies, candies

Recommended Daily Servings for a Normal adult:

 Rice- 5-7 cups, cooked
 Corn- 6 2/3 – 9 ¼ cups, cooked
 Root crops-1 small sized root crops
 Sugar- 5-9 level teaspoons

Note: 1 gram of CHO foods yield 4 calories.

1 cup cooked rice (160g) = 4 slices loaf bread, ordinary size about 17 g each or 5 pieces pan de sal
small size about 15 g each or 1 1/3 cups cooked cornmeal(270g) or 1 cup cooked camote 170 g
