Easy-peasy pancakes

 100g plain flour


 2 eggs
 300ml semi-skimmed milk
 50g butter (melted), plus extra for frying
 pinch salt

1) Put all the ingredients into a bowl or large jug, then whisk to a smooth batter. Set
aside for 30 mins to rest if you have time, or start cooking straight away.
2) Set a medium frying pan or crêpe pan over a medium heat and add a small amount
of melted butter.
3) When hot, ladle some batter into the pan, tilting the pan to move the mixture around
for a thin and even layer. If the pan is the right temperature, the pancake should turn
golden underneath after about 30 secs and will be ready to turn.
4) Flipping pancakes: Hold the pan handle, ease a fish slice under the pancake, then
quickly lift and flip it over. Make sure the pancake is lying flat against base of the pan
with no folds, then cook for another 30 secs before turning out onto a warm plate.
Continue with the rest of the batter, serving them as you cook or stack onto a plate in
the oven to keep warm.

 Lemon and orange wedges with a sprinkling of brown sugar

 Strawberries, cream and grated dark chocolate
 Stem ginger, lemon zest and honey
 Berry coulis, ground almonds and crème fraiche

Savoury

 Bacon, onion and cheese


 Spinach, goats cheese and mushrooms
 Pesto and roasted vegetables
 Salmon, chive and cream cheese
 Sweet potato, hummus and chorizo
 Mozzarella, avocado and basil with a drizzling of olive oil

Bit of both!

 Streaky bacon and maple syrup


 Sugar-coated prawns and guacamole
 Goats cheese, figs and honey
