BACON, CHILI, CHOCOLATE

TRUFFLES
Makes 50 small truffles

Ingredients Equipment
1 cup 2/3 Bittersweet chocolate  Metal bowl
2 Egg yolks  Casserole
1/2 cup Butter, unsalted  Rubber spatula
2 Tbsp Bacon fat
3 Tbsp Sugar
1 Tbsp Rendered bacon chopped
1Tbsp scant Chili powder
½ cup Cocoa powder, unsweetened

Directions

1. Melt the chocolate with the butter and bacon fat.


2. With a whisk, beat the egg and the sugar until smooth and creamy
and most of the sugar has dissolved.
3. Stir chocolate mixture into it.
4. Stir bacon and chili powder in chocolate ganache.
5. Let stand in the fridge until firm. Make some small balls and roll them
in the cocoa powder. Enjoy!
