Dark chocolate lavender lava cake, Chantilly

For 6 people

Ingredients:

8 oz 65% dark chocolate in small chunks

1 ¼ sticks of butter, diced

1 1/2 cups sugar

½ cup AP flour

3 whole eggs and 3 yolks

1 tbsp lavender water

1 ½ cups whipping cream

2 tbsp powdered sugar

Directions:

Preheat your oven at 450 degrees F, butter and flour ramequin, reserve.

In a bain marie, slowly melt chocolate and butter together, whisk in the eggs, whisk in sugar, then whisk in flour to combine.

Add the lavender water in, reserve.

Pour the mixture up to ¾ of the ramequin and bake for 6 min into a convection oven or 10 min in a conventional oven.

Whip cream and powdered sugar to medium peek.

Once cake baked, unmold and top with Chantilly and serve.
