SHRIMP AND GRITS, TOMATO

AND BACON SAUCE


Serves 6-8

Ingredients Equipment
For the sauce: • Chef knife
½ lb Bacon, cut into matchsticks • Pot
½ each Yellow onion, minced • Spatula
¼ cup Brown sugar
1/3 cup Sherry vinegar
about 26oz Diced tomatoes
2 each Bay leaves
4 sprigs Thyme
1.5 to 2 lbs Shrimps, peeled and deveined

For the grits:


5 cups Water
2 cups Milk, whole
2 cups Yellow grits
1.25 tsp Salt
1/3 lb Sharp yellow cheddar, shredded

Directions
For the sauce:
1. In a pan, on medium heat, render bacon for 8 to 10 min.
2. Add the minced onions and sweat until lightly blond color.
3. Stir in the brown sugar and wait for it to turn to caramel color.
4. Deglaze with the sherry vinegar and reduce it by half.
5. Add tomatoes, bay leaves and thyme and simmer for 30 min while stirring
frequently.
6. Season with salt and pepper, once it is done, reserve.

For the grits:


7. Pour water and milk into a pot, and bring to simmer on high heat, then whisk in
the grits and cook for about 20 to 30 min or until tender.
8. Add salt, shredded cheese.

For the shrimps:

9. Bring the tomato sauce to simmer and cook the shrimps in the sauce for 3 to 5
min. Enjoy!
