3 HACCP
Attention!
Before using the feature HACCP observe your local sani-
tary and health regulations.
Hazard analysis of critical control points
The HACCP feature is an optional part of the CM units.
If this feature is installed, a serial interface connector (RS 232) is O
located underneath the front panel, on bottom of the unit.
When the HACCP function is started all important cooking parame-
ters will be transmitted to the RS 232 connector.
This feature can be used in manual- and program mode
In Program mode HACCP only must be activated in the first step.

To start this function proceed as follows:


A) Select desired cooking mode with the dial.
B) Select times and temperatures

C) Press simultaneously interior cabinet temperature and


moistening push button (approx. 10 seconds)
D) On the temperature display a dot starts to flash for
confirmation, that „HACCP“ is active
E) Close cabinet door
F) The „HACCP“ function will be deactivated automatically at the
end of the cooking process or if the unit will be switched off lon-
ger than 4 seconds.
G) To deactivate the „HACCP“ transmission manually, press interi-
or cabinet temperature- and moistening push button
simultaneously, until the dot on the cabinet temperature push
button disappears.

Bit rate: 9600 bps
Data length: 8 bits
Parity Bit: none
Protocol: none
Stop bits: 1
The transferred datas exist of a headline, the actual temperatures,
runnuing time and a stop sign:
# 1 core tempearature
# 2 interior cabinet temperature
# 3 actual running time of the data transmission
Additional the position of the cabinet door will be indicated:
„Door opened“ or „Door closed“
