Function description CM (C1_O7/C1_09)
This Software Version can be used in electric-, as well as in
gas units.
To use this Software Version in gas units, it is necessary to install
a link permanently on connector X8 (of the CPU pcb) between ter-
minal 1 and 2 before changing the Software Version or carrying out
a Total Reset.
Version C1_07 can only be used in processor pcb without
extended memory
Version C1_09 can only be used in processor pcb with exten-
ded memory

1. Mode switch
After switching on the unit to any mode, the LED of the chosen
mode lights up and the green “on” indicator turns on.

1.1 On / off / on time, or power failure shorter than 4 sec.:


The last chosen function status will remain.

1.2 On / off / on time, or power failure longer than 4 sec.:

The last chosen mode and interior cabinet temperature will be O

taken over. On the timer display “0.” will be displayed and the
buzzer sounds. If the timer was set to “d.” (continuous running),
before the power failure, the unit remains on “d.”.

In program mode the “Prog” LED lights up and on the program


number display “C” (cleaning program) will be shown.

1.3 Selection of cooking mode
A) Switch on Combi-Steamer to the desired mode with the dial:
Steam mode 100°C
Hot air mode 30 - 300 °C O

Combi mode 30 - 300 °C


Vario steam mode 30 - 99 °C
Reheating mode 30 - 300 °C
PROG = Program mode

First set the dial to „0“-position, afterwards it is possible to


select a running time (1 - 120 min.) or to choose „d.“ for
continuous running.

The lower core temperature display shows the preset core tem-
perature.
It is possible to select a core temperature between
20 - 99°C with the dial.

E) Indication of actual cooking values:
During running a cooking mode or a program, the
interior cabinet temperature push button will be pres-
sed, the following actual cooking values will be shown

The interior cabinet temperature display shows the actual

2. Steam mode 100°C

2.1 Basic condition steam saturation


Cooking cabinet temperature is preset to 100°C, without indication
on interior cabinet temperatur display

2.2 Preheating steam generator up to 85°C

2.6 Temperature control of steam generator


The steam generator temperature is measured by the thermocouple
B5 on steam heater. When the thermocouple reaches a temperatu-
re of 150°C, the steam heaters will be switched off immediately.
Steam heating will be switched on again when the temperature
drops below 150°C.

Indication “unit too hot” will come on after 2 minutes when the
temperature remains above 150°C, the thermocouple is defect or
the temperature of the steam generator is below -5°C.

In case of lack of water measured by electrode/water level control,


the “lack of water” display will come on with a delay of 30 sec.

2.7 Fan motor cycle control


Initial start of fan motor: clockwise/counter-clockwise
61/101/201 models: 112 sec. clockwise, 8 sec. break,
112 sec. counter-clockwise
102/202 models: 100 sec. clockwise, 20 sec. break,
100 sec. counter-clockwise

2.8 If actual interior cabinet temperature is more than 15°C above


preset temperature, the LED of the steam mode will flash.

3.6 Temperature control of steam generator


The steam generator temperature is measured by the thermocouple
B5 on steam heater. When the thermocouple reaches a temperatu-

runs intermittently, without indication on the front panel.

3.9 If actual interior cabinet temperature is more than 15°C above


preset temperature, the LED of vario-steam mode will flash.

5.2 Heating up of interior cabinet by alternating operation of hot
air and steam energy from beginning, depending on the demand of
individual controlling sensor (priority changes every 8 sec.).
- Temperature control: Thermocouple B1
interior cabinet sensor - hot air energy
- Humidity control: Thermocouple B4
bypass sensor - steam energy
On gas units the hot air burner is active until the set temperature is
reached. The steam burner additionally is active in a time sequence
of 15 seconds (15 sec. on, 15 sec. off)

5.3 Quenching temperature is set to 70°C ex works


(possible range 50 - 120°C)

5.4 If actual interior cabinet temperature is more than 15°C above


preset temperature, the LED of the reheating mode will flash.

5.5 Temperature control of steam generator


The steam generator temperature is measured by the thermocouple

re of 150°C, the steam heaters will be switched off immediately.
Steam heating will be switched on again when the temperature
drops below 150°C.

7. Quenching system CM

Changing of quenching temperature


The quenching temperatures are set to 70°C ex works
(exception: hot air mode 90°C ex works) and can be varried bet-
ween 50 and 120°C. The change of the quenching temperature can
be carried out on the control panel. O

Procedure:
7.1 Select mode on which you like to change quenching
temperature, LED of cooresponding symbol will illuminate.

7.2 Press and hold down interior cabinet temperature and core 70
temperature push button (for more than 10 sec.). Keep both
push buttons pressed during the whole procedure.
Memorized quenching temperature will be shown on actual and

preset core temperature display simultaneously O

7.3 With both push buttons still pressed turn the core temperature
dial to zero position. Now the required quenching temperature 80
can be selected (range between 50 and 120°C) with the core tem-
perature dial (e.g. 80°C). 70
7.4 On the upper core temperature display the new quenching tempe- O
rature (e.g. 80°C) will be shown.
On the lower core temperature display the old quenching tempera-
ture (e.g. 70°C) will be indicated.

7.5 With interior cabinet temperature and core temperature


push button still pressed, select the next desired cooking mode in
which the quenching temperature shall also be changed.
Continue as described in step 7.3 and 7.4.

7.5 Release both push buttons, to memorize all new quenching


temperatures.
