Endosperm, tissue that surrounds and nourishes the embryo in the seeds
of angiosperms (flowering plants). In some seeds the endosperm is completely
absorbed at maturity (example : pea and bean), and the fleshy food-
storing cotyledons nourish the embryo as it germinates. In others, some of the
endosperm is present until germination (example : wheat, castor bean), and the
cotyledons are typically thin and membranous and serve to absorb the stored food
from the endosperm upon germination. In the coconut, the liquid endosperm
contains important growth substances. Endosperm accounts for the economic
importance of cereal grains and oilseeds.
The initiation of endosperm is a definitive characteristic of the double
fertilization of angiosperms. Its development requires the fusion of at least one
polar nucleus in the embryo sac with one of the two sperm nuclei from the pollen
grain. In gymnosperms the nutritive material of the seed is present before
fertilization.
