INTRODUCTION TO TERM SHANGRI- LA :-

Shangri-La is a fictional place described in the 1933 novel Lost Horizon


by British author James Hilton. Hilton describes Shangri-La as a
mystical, harmonious valley, gently guided from a lamasery, enclosed in
the western end of the Kunlun Mountains. Shangri-La has become
synonymous with any earthly paradise, particularly a mythical
Himalayan utopia – a permanently happy land, isolated from the world.
In the novel, the people who live at Shangri-La are almost immortal,
living hundreds of years beyond the normal lifespan and only very
slowly aging in appearance. The name also evokes the imagery of the
exoticism of the Orient.

Lost Horizon is a 1933 novel by English writer James Hilton. The book
was turned into a film, also called Lost Horizon, in 1937 by director
Frank Capra. It is best remembered as the origin of Shangri-La, a
fictional utopian lamasery located high in the mountains of Tibet.

In the ancient Tibetan scriptures, the existence of seven such places is


mentioned as Nghe-Beyul Khembalung. Khembalung is one of several
beyuls (hidden lands similar to Shangri-La) believed to have been
created by Padmasambhava in the 9th century as idyllic, sacred places
of refuge for Buddhists during times of strife (Reinhard, 1978).

About the owner:-
Shangri-La Hotels and Resorts is the trading entity of Shangri-La
International Hotel Management Limited. Hong Kong-based
multinational hospitality company. Founded by Malaysian tycoon
Robert Kuok in 1971, the company has over 100 luxury hotels and

development in Hong Kong, Mainland China and Asia Pacific region;
infrastructure projects in Hong Kong and Mainland China; and hotel
owner ship and operations in Mainland China. They formally also
engaged in third-party logistics, freight services and warehouse
operations, however the former subsidiary was listed on 19 December
2013, under the name Kerry Logistics Network

Its largest shareholder is the family of Robert Kuok, a Malaysian


Chinese businessman. It was listed on the Hong Kong Stock Exchange in
1996.

Robert Kuok
Robert Kuok Hock Nien born 6 October 1923, is a Malaysian
business magnate and investor. According to Forbes, his net
worth is estimated at $12.8 billion as of March 2019, making
him the wealthiest person in Malaysia and 104th wealthiest in
the world. As of April 2019, according to the Bloomberg
Billionaires Index, Kuok has an estimated net worth of $18.4
billion, making him the 53rd richest person in the world.

Robert Kuok is media-shy; most of his businesses are privately


held by him or his family. Apart from a multitude of businesses
in Malaysia, his companies have investments in many countries
throughout Asia. His business interests range from sugarcane
plantations (Perlis Plantations Bhd), sugar refineries, flour
milling, animal feed, oil, mining, finance, hotel (Shangri-La
Hotels and Resorts), property, trading, freight and publishing.

International, the world's largest listed palm oil trader
company.
History of Shangri-la
The first hotel of the luxury Shangri-La Hotels and Resorts
Group was the Shangri-La Hotel Singapore, opened in 1971.The
name derives from the mythical place Shangri-La, described in
the 1933 novel Lost Horizon by British author James Hilton as
described above.

forms, suggests majestic mountains reflected in the waters of a

Shangri-La Bangaluru
Shangri-La Hotel opens in Bengaluru on Sept 24
Hong Kong-headquartered luxury hotel group Shangri-La Hotels and
Resorts opens its second hotel in the country with the launch of the
Shangri-La Hotel Bengaluru on Thursday.

Located in the heart of the central business district on Palace Road, it


is the largest hotel in the city with a room inventory of 397 keys and
the Group’s second hotel in the country, 10 years after the launch of
its first hotel in New Delhi. Developed at an investment of 600 crore
(excluding land cost) by Adarsh Developers and managed by the
Shangri-La Group, the hotel will introduce many firsts to its guests
and residents of Bengaluru.

Introducing many firsts


A 24-hour check-in and check-out system, that allows guests to check
in at 8 p.m. and to check out at 8 p.m. the next day.
Eight Food & Beverage restaurants that can seat 900 guests with
cuisines ranging from Global, Indian, Italian and Chinese, to Japanese,
Spanish and Mediterranean; all supported by a team of expatriate
chefs from Italy, India, China, Japan, Germany and France.
A car parking programme that is connected to the restaurant’s point-
of-sale system that automatically sends an alert to the valet desk when
the billing is being processed, so the guest’s car is ready to pick up the
guest.
Technogym equipment that allow guests to connect their gadgets such
as iPods, iPads, mobile phones and so on, to their gym equipment and
conduct interviews, watch videos, listen to music, create documents,
while they work out.
“We will be opening with 220 guest rooms to begin with and open the
rest in 30 days. Three of our eight restaurants will be open — b Café
where ‘b’ stands for Bengaluru, is our all-day dining restaurant
offering global cuisine across seven live theatre-style cooking stations;
the Lobby Lounge which will serve snacks, beverages, breakfast/high
tea items and our signature restaurant, the Shang Palace that will serve
food from different regions of China,” Jens Corder, General Manager,
Shangri-La Hotel Bengaluru told BusinessLine.
While the room rate starts at 8,000 plus taxes, an opening offer of  
9,500 per room, including 3,000 worth of credits in F&B outlets,
airport transfers, Health Club & Spa will be on till the year-end.
Corder expects F&B to contribute to 67 per cent of the hotel’s revenue
as the hotel offers 12,500 sq ft of banqueting space.
“Although the city is largely a market for business travellers, we want
to promote the city as a destination in itself with packages such as,
Celebrate Bengaluru, Breakfast in b Café, Epicurean, to name a few,”
said Corder.
The Shangri-La Hotels and Resorts owns/manages over 90 hotels
worldwide with a room inventory of over 38,000 rooms.
Its first hotel opened in Singapore in 1971 and the Group operates
Shangri-La, Kerry, Traders and Hotel Jen branded properties.
The height of luxury

In September 2015, Adarsh Realty and Hotels Private Limited and


Shangri-La Hotels and Resorts launched Shangri-La Hotel, Bengaluru.
It is the city's leading destination for business and pleasure, offering a

BAKERY AND CONFECTIONERY


One of the busiest departments in a hotel is
the bakery and pastry department. This department is
responsible for making all bread products, pastry products, cakes
and biscuits and any deserts used in the hotel. The bakery and
pastry department, or more commonly known as the
Patisserie, commissions could range from making a small dish
of Petit Fours for a room service order, to a large multi-tiered
wedding cake for a buffet style dessert serving.
During the opening times of the hotel's restaurant the Patisserie's
roles and responsibilities will tend to focus on the preparation of
the customer's deserts (also known as sweets
and puddings depending on location and culture). There is a
very large assortment of deserts that a restaurant can serve to
their customers, but to make categorizing deserts easier you can
think of them as hot or cold.
Hot deserts are the cereal based pudding, such as rice pudding,
and pastry based sweets such as fruit pies. All of these puddings
can also be served cold as in the case of Arroz con leche; a rice
dish from Spain.
Hot deserts tend to appear on restaurant menus in the winter
months, partly because the customers want a hot desert to keep
them warm, but also because a lot of these deserts are based
around fruit which is in season in the later part of the year.
Apple pie is a particular favorites in Great Britain in the autumn
months when apples are in abundance.
There is a very large range of pastry based dishes that can be
found on menus. The type of dish will depend on what type of
pastry it is made from, e.g. the structure and appearance of a
dish made from short pastry will be complexly different from a
dish made from choux pastry. Short pastries are used to make
flans, pies and tarts and then will have various filling added. The
fillings will vary greatly, but will mainly depend on locality of

made of custard and fruit. Puff pastry is used to make deserts

pastry deserts can be made in miniature and served as a
collection of Petit-Fours. Choux pastry is probably one of the
most popular pastries around the world. Eclairs, cream buns,
profiteroles, and fritters are just some of the deserts made from
choux pastry. One of the most dramatic deserts made from
choux pastry is Gateau Vesuvius. This gateau is made from
many layers of profiteroles, fixed together with a cream mixture
and shaped to resemble a volcano. An alcohol is placed at the
top of the desert and set alight so when the gateau is carried to
the customer's table it resembled an erupting volcano; especially
effective if the restaurants lights are turned off or dimmed.
Cold deserts tend to fall in to the ices, including ice cream,
sorbets and mousses, and sponge based dishes, such as gateaux
and sponge pudding. Rather like the pastry pies these types of
dishes will greatly vary depending on what part of the world the
restaurant is situated in. Eve’s pudding is a traditionally British
desert made from Victoria sponge and apples and Gateau
Basque is a traditional caked based desert from France. Ice
based dishes can also be numerous having such a large range
from country to country. Over the last few years a desert made
from a mixture of meringue, ice cream, cream and fruit called a
Mess has become very popular, particularly in England with the
most famous example being Eton Mess. All deserts are nearly
always served with a cream, custard or a sauce. Therefore a
pastry chef must be very highly skilled in not only sauce making
but also using a piping bag as this is the main method used to
add creams, custards and sauces to a desert quickly and
precisely.
