Olive Tapenade Mediterranean Veggie Wraps

Tzatziki Sauce Dip


1 15-ounce can of black olives, pitted
1 16 ounce jar of green olives with pimentos
1 large cucumber, shredded and drained
¼ cup of extra virgin olive oil
2 cups of low-fat plain yogurt
4 cloves of garlic, rough chopped
4 cloves of garlic cloves, smashed and minced
½ teaspoon freshly ground pepper
1 tablespoon extra virgin olive oil
1 tablespoon fresh dill, minced

15 leaves of fresh mint, cut into a chiffonade
½ teaspoon salt
Drain the black and green olives and toss into a food

Throw all the ingredients in a food processor and


blend until very smooth. Set aside.

1 8-ounce jar roasted red peppers, drained and cut
into strips (or fresh roasted)
1 zucchini, cut into thin strip
2 green onions, thinly sliced

¼ cup freshly grated Parmesan cheese


¼ cup crumbled feta cheese Rosemary Lime Frozen Yogurt

Blend all the ingredients in a bowl. Set aside.

Spread hummus onto the tortilla. Put ¼-1/3 cup of


wrap ingredients onto half of the tortilla. Wrap
tightly. Serve cold with tzatziki dipping sauce or
heat and serve with sauce.

Optional: Heat 1 tablespoon olive oil in a pan.


Gently place wrap in the heated oil. Heat about 2
minutes; and flip – heat 2 more minutes on the
other side.

3 cups plain low-fat yogurt


1 cup sugar
¼ cup freshly squeezed lime juice
2 teaspoons vanilla
⅛ teaspoon salt
2 tablespoons fresh rosemary leaves, finely
chopped
¼ cup chopped pistachios (optional)

Combine all the ingredients in a medium bowl and


whisk until smooth. Freeze the yogurt mixture in an
ice cream maker according to the manufacturer's
directions. Freeze for about 2 to 4 hours before
serving.

1 large cucumber
Head of garlic
1 tablespoon fresh dill
15 leaves of fresh mint
½ bunch of parsley
2 tablespoons fresh rosemary leaves
1 zucchini

4 limes
