EXPLAIN

Food preservation frees people


from total dependence
on geography and climate in
providing for their nutritional needs
and wants.
Food preservation is one of the most
important inseparable parts of human
life. To increase the shelf-life of the food
products, application of various
methods such as drying, storage
in vinegar under acidic condition,
canning, freezing, fermenting, dry
salting, curing, smoking, and sealing
have been suggested.

Through food preservation, wastage of food can be reduced. As the old saying goes
“Waste not, want not”
Ultimately, all natural foods will spoil and even those which have been preserved in
one form or another lose their color, flavor, texture, and nutritive value.

Based on their perishability, foods may be classified as follow:


Perishable foods Those that spoil readily like milk, fish, meat, poultry, ripe succulent
fruits, and leafy vegetables.
Semi-perishable foods Those that can keep for a limited period of time like onions,
garlic, eggs, and roots crops.

Relatively nonperishable foods Those that keep for almost an unlimited period of
time like rice, dried mature beans, mature corns, and many mature nuts and dry
legumes or pulses.

SIGNIFICANCE OF FOOD PRESERVATION


Food preservation is also essential from the hygienic stand point. Unless perishable
and semi perishable foods are adequately preserved, they form products harmful to
the body and are hazard to health.
Food preservation is important from the standpoint of convenience also. The family is
greatly helped by the availability of well-preserved foods in convenient forms easily
and compactly stored.

CURING INGREDIENTS AND THEIR FUNCTIONS


SALT - is the primary ingredients used in meat curing. It makes up the bulk of the
curing mixture because it is not only a good preservative but if provides the most
desirable flavor.
Sugar - is a secondary ingredients in the curing formula which counteracts the
astringent quality of salt. It enhances the flavor of the product.
Nitrates - are color fixation agents or substances responsible for the development of
the proper color in cured meat products.
Ascorbic acid - these substances speed up curing reaction Phosphates- are used to
increase the water holding and binding Capacity of cured products.
Vinegar - is added to flavor but it also has some antiseptic value. Therefore aids in
prolonging the shelf life of the finished products.
Spices - although the flavoring materials are naturally prescribed in many foodstuff,
palatability is further enhanced by the addition of various substances, though
lacking in nutritional value, stimulate the flow of digestive secretion thereby
materially digestion.
Binders, fillers, emulsifiers - do not cause any radical change in the quality of the
product and in some causes actually improved its characteristics.

DETERIORATION AND SPOILAGE OF FOODS To preserve foods, we must cope with their
spoilage, and to cope with spoilage, we must know what causes it and how it is
brought about.

PRESERVATION TECHNIQUES
1. DRYING - Is the food preservation process that consists of removing the food’s
water, which effectively inhibits the growth of microorganisms
2. PASTEURIZATION – is a process that kills bacteria in liquid food. In this method
moderately high ( 62 degree to 100 degree celcius) temperatures are used (
for about 15 to 30 minutes) to inactivate certaib enzymes and kill certain other
microorganisms specially in milk.

3. CANNING – is the process of applying heat to food that’s sealed in a jar in
order to destroy any mi.croorganisms that can cause food spoilage.
4. VACUUM PACKING – a method of packaging that removes air from the
package prior to sealing This method involves ( manually or automatically)
placing items in a plastic film package, removing air from inside, and sealing
the package. Shrink film is sometimes used to have a tight fit to the contents.
5. SUGARING – is the process of desiccating a food by first dehydrating it, then
packing it with pre sugar. This sugar can be crystalline in the form of table or
raw sugar, or it can be a high sugar density liquid such as honey, syrup or
molasses.
6. SALTING – is the preservation of food with dry edible salt. It is related to
pickling ( preparing food with brine, that is, salty water) and is one form of
curing. It is one of the oldest methods of preserving food.
7. PICKLING – is the process of soaking food in a solution containing salt, acid, or
alcohol.

DETERGENT, DISHWASHING AGENTS VERSUS ORGANIC SOAP

Soaps are eco-friendly and biodegradable


1. DETERGENTS - They are sodium salts of long chain alkyl benzene sulphonic acids
or sodium salts of long chain alkyl hydrogen sulphate.
2. SOAPS DETERGENTS Soap are made from fat and alkali by specification method
Detergents are carbonic compounds which are not alkaline. There are cheap.
They are costly. There are not suitable for delicate clothes They are suitable for
delicate clothes They are clean better in hot water. They clean both in hot and
cold water

⮚ Consumer needs to be informed that the smaller detergent products can also be
the least polluting ones.
⮚ Consumers must press for implementation of labeling standards and regulation so
that they may avail of environmentally friendly choices.
⮚ Using 'green detergents' that do not contain non- essential additives like perfumes,
colour and brightening agents in minimal packaging will go a long way in ensuring
a cleaner and healthier environment.

In simple terms, organic soaps are

BENEFITS OF ORGANIC SOAP

1. Animal-friendly– organic soaps are not tested on animals. The soap products
are all-natural and organic and chemical-free which makes testing an
unnecessary step.

6. Contain antioxidants– organic soaps are made using natural ingredients
and essential oils. These have antioxidant properties which are good for skin
and overall wellness.
7. Balance the pH levels of the skin– pH balance is important to maintain
the natural skin barrier. The pH balance of organic soaps is between9-10. The
pH level of these soaps is alkaline which makes them effective and gentle

cleanser. Coconut oil in natural soaps makes them nourishing and moisturizing
and helps maintain the natural pH balance of the skin.
8. Natural Aroma– natural organic soap’s aroma is very pleasant. This can last for
many days and makes you feel fresh for a long time after bathing. The aroma
and scent of natural and organic soaps are way better than the scent of

artificially enhanced beauty soaps.


9. Antibacterial qualities– Natural oils used to make organic soaps have anti-
fungal and anti-bacterial properties. These soap are completely natural and
free from any chemical exposure. The essential oils used in making the soaps
come directly from plants which help our mind and body to relax and also
protect the hands from bacteria.
10. Idea choice for vegans– organic soaps are manufactured using botanical
herbs and extracts which makes it an ideal vegan product. these soaps do
not use animal fats instead these are made using palm oil and coconut oil
mixed with other essential oils extracted from lavender, rose, peppermint, tea
tree, clove, cinnamon, orange, and lemon.

Online Shopping occurs when a customer buys through a digital platform. An example
of such a platform is Bikerringshop.com, online biker ring store from Thailand. You don’t
have to live in this country to get one of the products this store sells. Global coverage is
one of the major benefits of online shopping.

Alternative names are: e-web-store, e-shop, e-store, Internet shop, web-shop, web-
store, online store, online storefront and virtual store. Mobile commerce describes
purchasing from an online retailer's mobile optimized online site or app.

CLASSIFICATION OF ONLINE SHOPPING

An online shop evokes the physical analogy of buying products or services at a


shopping center. Three way of Online Shopping:

1) The process is called business-to-consumer (B2C) Online Shopping


2) The process is called business-to-business (B2B) Online shopping.
3) The process is called consumer-to-consumer (C2C) Online shopping.

HOW DOES ONLINE SHOPPING WORK?

Above all, you will need an Internet connection, a debit or credit card, and a secure
password. You may also need to have an email address or mobile phone number.

Most retailers will allow you to make up your password. Make sure it is a password that
nobody could guess. Avoid your birthdate and those of relatives. Ideally, you should
