This molten chocolate lava cake is the ultimate dessert. An easy to make and decadent treat for all
chocolate lovers!
INGREDIENTS:
▢6 oz bittersweet chocolate
▢2 eggs
▢2 egg yolks
▢1 pinch salt
▢2 tbs flou
2. Melt the butter with the chocolate on low heat in a double boiler or in the microwave. Whisk
until smooth.
3. In a medium bowl, beat the eggs with the egg yolks, sugar and salt until thickened and pale. An
electric mixer will work best.
4. Fold the chocolate mixture and flour into the egg mixture. Pour the batter into the ramekins and
bake at 450 for 6-8 minutes, it really depends on your oven.
5. Let the cakes cool in the ramekins for a minute, then cover each with an inverted dessert plate.
Carefully turn each one over, let stand for 10 seconds and then unmold. Sift powdered sugar on
top and garnish with berries if desired. Serve immediately.
Notes
The bake time will change based on the size of your ramekins and your oven's idiosyncrasies so it's a
good idea to do a test batch before you serve these at a dinner party.
Try adding a flavor you enjoy like orange zest, raspberry reduction or a hit of caramel.
Butter Cookies
Ingredients
INGREDIENTS:
▢2 cups flour 240g
▢1/2 tsp salt 3g
▢1 cup unsalted butter 227g
▢1/2 cup sugar 100g
▢2 egg yolks
▢2 tsp vanilla extract 5mL
▢1/3 cup sanding sugar

INSTRUCTIONS:
1. In a stand mixer fitted with a paddle attachment, cream the butter, salt, and
sugar together until light and fluffy.
2. Add the egg yolks while mixing. Scrape down sides of the bowl.
3. Add 2 tsp vanilla extract.
4. Pour in the flour mixture and mix until incorporated.
5. Roll the dough into a log. Wrap in parchment paper or plastic, then chill it
in the refrigerator for at least an hour. I've found the best way to keep the
dough from flattening out on the bottom is to pop it into an empty cardboard
paper towel roll.
6. Once the dough is chilled sprinkle sanding sugar on a clean surface. Unwrap
the dough and roll in the sugar.
7. Use a sharp knife to cut dough into slices of even thickness.
8. Place cookies on a parchment-lined baking sheet and bake at 350F for 10-12
minutes or until the edge is JUST turning golden brown.

Toasting Bread
Heat a heavy tawa or pan or griddle. Spread about ½ to 1
teaspoon olive oil on it. You can even use butter instead of olive oil. Keep
the flame to its lowest.
Place bread slice on it. You can keep 1 to 2 bread slices at a time
depending on the size of the griddle or tawa or pan.
Lightly toast the bread from the base and then flip it.
