BEER YEAST FOOD

INTRODUCTION:

BEER YEAST FOOD is used to promote the healthy growth and


fermentation of yeast. It is a balanced combination of inorganic
and organic nutrients and growth promoters.

PURPOSE:

Temperature, pH and various inorganic components of the wort


affect the activity of the yeast during fermentation.

Yeast cannot live on sugar alone. Yeast also need nitrogen, and
amino and fatty acids to enable them to live and grow. The primary
source for these building blocks is the free amino nitrogen (FAN)
and lipids from the malted barley. Refined sugars like table sugar,
corn sugar or candy sugar do not contain any of these nutrients. It
is always a good idea to add some yeast nutrients to ensure good
yeast growth.

The use of BEER YEAST FOOD:

1. Eliminates slow fermentations, which may otherwise stop while


residual sugars are still present.

2. Ensures satisfactory yeast growth, additional enzyme production


and therefore an accelerated rate of fermentation as long as
sufficient sugars are available.
3. Assists the yeast in commencing a vigorous fermentation and
this prevents the growth of contaminating microorganisms.

4. The addition of BEER YEAST FOOD can also result in a


reduction in yeast usage.

EFFECT OF TEMPERATURE / pH:

The essential nutrients in BEER YEAST FOOD are active over a


wide temperature range up to 50 deg.C. Temperature in excess of
50 deg.C will denature some of the nutrients present, so BEER
YEAST FOOD should be added after wort cooling.

BEER YEAST FOOD is active over the very wide pH range


encountered in biological systems.

DOSE RATE:

BEER YEAST FOOD should be added with the yeast at the


beginning of fermentation. The dose rates will vary depending on
the particular process but will normally be in the range of 5 - 10
gm / hectolitre.

STABILITY:

BEER YEAST FOOD can be stored indefinitely if stored in cool,


dry conditions (<20 deg.C)

PACKING:

BEER YEAST FOOD is usually supplied in 25kg plastic lined


fibre drums, but may be custom packed on demand.
