Used cooking oil presents both health and environmental issues if not properly managed. An estimated 3 million tonnes of used cooking oil is discarded annually in India, which could potentially generate 222 crore litres of used cooking oil for collection. However, there is currently no formal structure for collecting waste cooking oil. USED COOKING OIL

FACTS
1. As much as 23 million tonnes of edible oil is consumed in the country
annually. Out of this, 3 million tonnes of oil is discarded after use and is
called used cooking oil, he said.
2. “There is a potential to generate 222 crore litres of UCO annually but no
structure exists for collection of waste cooking oil,” he said.

RUCO (Repurpose used cooking oil)

During frying, several properties of oil are altered, Total Polar Compounds (TPC)
are formed on repeated frying. The toxicity of these compounds is associated with
several diseases such as hypertension, atherosclerosis, Alzheimer’s disease, liver
diseases. Therefore, it is essential to monitor the quality of vegetable oils during
frying. In order to safeguard consumer health, FSSAI has fixed a limit for Total
Polar Compounds (TPC) at 25% beyond which the vegetable oil shall not be used.
From 1st July, 2018 onwards, all Food Business Operators (FBOs) are required to
monitor the quality of oil during frying by complying with the said regulations

FSSAI is implementing an EEE Strategy to divert Used Cooking Oil from the food
value chain and curb current illegal practices. Education Enforcement Ecosystem
the EEE Strategy approach ensures good health and welfare for all 130-crore
citizens, aiding energy security, climate change mitigation, and leading to
environmentally sustainable development.

Total polar compounds (TPC) whose polarity are larger than those of

triglycerides, are generated from peroxides and hydroperoxides during continuous

frying, including short chain fatty acids, aldehydes, ketones, alcohol and nonvolatile

products
