GIZDODO RECIPE
(Gizzards and Plantains)
Gizdodo / Dodo Gizzards are coined names for a Nigerian dish prepared with
a combination of gizzards and plantains (dodo).
This is one of those recipes ”invented” from excesses or in order to reduce
food wastage. If you’ve read through my older posts, you’ll know that I love
plantains…. a lot. So you bet I also love Dodo gizzards☺.
Chicken gizzards is best used for this recipe, but you can also substitute it
for turkey or duck gizzards. As for the plantains, I’ll highly recommend ripe
plantains with some black spots(on the skin), but not overly ripe, so that you
don’t end up with a less appealing meal.

It is also a party favorite and served as a meal or accompanied by other
dishes or Small Chops (appetizers).

* Clean the Gizzards by removing the yellow lining. Then wash the gizzards
with salted water or lemon juice.Scrub well to get rid of any dirt. Then Rinse
the gizzards in running water, strain and set aside.
** You can cut the cooked gizzards into smaller bite sizes.
Tip: If you buy yours prepacked, it is possible that the yellow lining won’t be
there, so simply wash in salted water or lime/lemon juice , rinse and strain.
1. Place the cleaned gizzards into a pot, pour enough water to half the level of
the gizzards. Season with half onion bulb,garlic, one stock cube, thyme ,curry
and salt to taste. Cook until tender and set aside.

Tip: Gizzard is a tough meat(a muscle meat to be precise) and most people
assume that it does not absorb any of the seasonings while cooking. But I
highly recommend that you season the gizzards properly using as much
seasoning as you are comfortable with and let the stock dry as it cooks the
meat. You’ll be amazed at how tasty, gizzards can be ☺.

2. Next, Cut the plantains into cubes, just like it was done here and fry in hot
vegetable oil until brown. Transfer onto a sieve.
Fry the gizzards in the same oil until brown and also Transfer onto a sieve
lined with paper towels to absorb excess oil.
Tip:
For a healthier option, grill the gizzards in the oven until brown.
blend coarsely.
Heat up some oil, add chopped onions, fry a bit and add the ground
cray sh(remember the cray sh is optional).
Stir-Fry for 5 seconds and then pour the blended mix into the pot and fry
for about 10-15 minutes or until the sour taste is lost.

Then add one stock cube and salt to taste.Simmer for 2 minutes. And set
aside
Tip: You’ll know the sauce is ready when the oil rises to the top of the stew.
4. Add the fried gizzards to the sauce and simmer for 1 minute to soak in the
sauce.
Add the fried plantains, chopped onions,green&red peppers. Mix thoroughly
and put off the heat.
And your meal is ready.
Gizdodo/Dodo Gizzard can be served by itself or with jollof rice, coconut rice
or plain boiled white rice. The choice is yours, Enjoy!

Nigerian Salad Recipe
Nigerian Salad also known as ”Nigerian mixed vegetable Salad” is one of
the richest salad recipes you can ever nd. It is prepared with more than ve
vegetables, combined together and enriched with the classic Baked Beans
and Cream.
Believe me, this Salad is not complete without Baked Beans and Cream(or
mayonnaise). So make sure you have these two ingredients at hand, if you
really want to get the original Nigerian Salad.

(Nigerian salad is usually served with Heinz original Salad Cream, and comes
in a bottle, but here in Spain, it is sold in a plastic bottle. In the absence of
this, Mayonnaise or condensed milk can also be used)

Preparation:
-Wash all the vegetables separately in suf cient water (add a spoonful of
vinegar, baking soda or lemon juice to the water to help kill harmful bacteria)
. Rinse thoroughly in fresh water.
– Boil the green peas for 2 minutes, strain it out and using the same pot, boil
the eggs and potatoes together, the potatoes might cook before the eggs ,
so take it out when it is done and let the eggs boil until hard boiled.
Peel of the egg shells and slice the eggs as thinly as you can.
Peel of the skin of the boiled potatoes and cut into small cubes.
– Slice the cabbage into tiny strips, then wash again and strain to remove
excess water. Set aside for later use.
Tip: (the cabbage might store ants or pesticide in its leaves, that’s why it
needs to be washed again after slicing) .
– Scrape off the green skin of the cucumber, cut into two equal halves ,
remove the seeds(you can eat it if you like) and then cut into small cubes.
Set aside for later use.

– Cut the tomatoes into two halves, remove the seeds and cut into small
cubes. Set aside for later use.
– Open the can of sweet corn, pour into a sieve to strain out the preservation
water. Set the corn aside for later use.
– Open the can of baked beans, pour into a small bowl and set aside for later
use.
Now that you have all the ingredients ready, it’s time to put them together.
1. Get a large salad bowl and place the vegetables in the bowl, layer by layer
until there’s nothing left.
2. Place the sliced eggs on the prepared salad, and also spread the baked
beans.

3. Now, cover the salad bowl and chill in the fridge until needed.
4. Finally serve with the salad cream(or mayonnaise) and Enjoy.
Jollof
Rice, Fried Rice and other Nigerian rice recipes. It can also be eaten alone or
served with bread as a sandwich.
This salad like most raw vegetables can be preserved in the fridge but will
only keep for 24 hours. So eat it while it’s fresh and enjoy
☺.

Nigerian Egg Fried Rice
There are several variations, of which the Egg fried rice is one of them.
The egg fried rice isn’t so different from the classic Nigerian Fried Rice, but
the addition of eggs, takes this delicious meal to different tasty level… I
promise, you’ll love it. ☺

Cooking Directions
1. The rst step is to prepare the Vegetables;
a. Wash all the vegetables.
Dice the onion & set aside ;
b. Peel the carrots & cut into small cubes.
c. Remove the seeds of the green bell peppers & cut pepper into small
cubes.

Tip: Although fresh veggies are the best for Nigerian egg fried rice, frozen
vegetables can also be used(after thawing).
d. Place the green peas& carrots in boiling water for 5 minutes, strain out and
place in a bowl of cold water, leave to cool in the water, then pour into
a sieve and set aside.
4a . Pour the chicken stock into a large pot and bring to a boil. As the stock
begins to boil, add the parboiled rice, seasoning cubes(stock cubes), curry
powder, garlic powder, onions and salt to taste. Leave to cook on medium
heat until it’s done.
The stock should be at almost the same level as the rice, so that it dries up
completely when the rice is done.
You can add some water if the stock won’t be enough to cook the Rice.

TIP; The cooked rice should not be soggy or too tender and the grains
shouldn’t stick together either.
5. Break the eggs, add salt to taste, whisk and Fry in a pan(like an
omelet),cool and dice the fried eggs.

6. Heat up the vegetable oil; add the carrots, peas, green bell pepper and
diced liver/meat; stir-fry for 1 min and then add white/black pepper, a pinch
of curry & a little seasoning cube to taste…mix together and add the diced
eggs. Mix thoroughly and pour into a bowl.

The Rice is going to be fried in small batches, so you’ll have to divide the
stir-fried vegetables into portions, to go with the quantity of rice you
cooked.
7. Pour a portion of the stir-fried mix into the frying pan; add the cooked rice
and stir-fry for about 2 minutes.
Tip: Do not overcrowd the pan,make sure there is a little space in the pan so
that you can move the rice around the pan for even distribution of heat.
Repeat this process for the remaining rice and vegetable mix.
And your Nigerian egg Fried Riceis Ready to be served with salads, Moi- moi
,Fried plantains, grilled sh/beef/Chicken or any meat of your choice. ENJOY!

tasty snack ☺. Samosa is usually served at most Nigerian parties as an
appetizer, and also classi ed as a ”small chop”(that’s a coined phrase for
” nger foods”) .

00 gr minced beef/chicken
2
2 medium Irish potatoes
2 medium carrots(optional)-
2 handfuls of green peas
1 long stalk of spring onion OR minced onion
1 tiny garlic/a pinch of garlic powder
1 teaspoon of curry powder
A pinch of black pepper (optional)
1 stock cube
2 cooking spoonfuls of vegetable oil
chilli pepper(cayenne) (to taste)
Salt (to taste)
Vegetable oil for deep-frying the Samosas
Note: Samosas can also be baked so, skip the vegetable oil for deep frying, if
you opt for baking.

Tip: Frying the spices, releases their natural avors and oils.
our the our into a bowl, add salt and add the 3 tablespoonful of

vegetable oil and lukewarm water. Mix well until you get a stretchy
dough.
Then cover with an airtight plastic wrap or aluminium foil and leave to
rest for about 15 minutes.
After 15 minutes, knead the dough to make it more stretchy and elastic.
C ut out a bit, roll out with a rolling pin .Make sure its not so thin, should
be about 3-4 mm in thickness.
Using a circular cutter, cut the rolled dough, and remove the excess
dough at the corners, and then cut the circular shape into 2
diameters(2 half circles of equal sizes).
Rub water on the straight edges of one of the dough and shape it into
a cone(the shape of a party hat);Now take a spoonful of the Samosa
lling and scoop it into the cone shaped dough.
Don’t over ll it. Rub some water at the edges and seal tightly.
Repeat this process for the remaining dough.
Heat up some oil until moderately hot and fry the Samosas in it.
Fry both sides of the Samosa until lightly brown and transfer into a
sieve lined with paper towels and Enjoy!

TIP: If you’ll rather bake the samosa, brush with oil or egg wash, set your
oven to 180º C and bake for 15 minutes. Nigerian samosa is enjoyed with a
chilled drink or any local Nigerian Drink.
