1. (Milk tea poisoning) The Philippine National Police said the


remains of the two people killed after drinking milk tea from
the Ergo Cha milk tea shop in Manila have tested positive for
a bleaching substance. In a statement released Monday, the
PNP said the remains of both William Abrigo, owner of Ergo
Cha milk tea shop in Sampaloc, Manila, and customer
Suzaine Dagohoy tested positive for oxalic acid, a "colorless
substance [that] will not easily be determined when
dissolved in water or beverages."

Solution: When working on a food service, label all ingredients


for safer and sure usage; Organize every item that is in your
work stations, ingredients and every related to food should
stay in your kitchen, and cleaning should be sorted in a
different drawer or a room.

2. In Taiwan, from 1992 to 2012, 128 people were affected


and 11 died. In China, puffer fish poisoning affected 131
people from 2004 to 2007 and 35 deaths were reported.
Puffer and porcupine fish are common examples of fish
containing tetrodotoxin. It has also been isolated from
other species including goby, shellfish, California newt,
parrotfish, blue-ringed octopus, starfish, angelfish, and
xanthid crabs.Patients with tetrodotoxin poisoning
usually develop symptoms within 30 minutes to six hours
of ingestion. These may include nausea, diarrhea, and
vomiting, abdominal discomfort, numbness in the face,
muscle weakness and slurred speech and cardiovascular
effects including hypotension, bradycardia and
arrhythmia. If the victim survives the first 24 hours, they
are expected to fully recover as toxin can be expelled
from the body through urination.
Solution: If the chef or cook that will handle the pufferfish is
not skilled, don’t attempt to eat the said products.

 Proper execution is needed, in Japan you need to have license


for preparing it so before handling the dangerous ingredients
you need to make sure that you are properly trained and
licensed to handle it.

3. Cross contamination between foods such as touching raw


meets and then preparing vegetables without washing
hands.

Solution: Wash and Sanitize all equipment and utensils that


come in contact with food; Avoid touching your face, skin ,
and hair or wiping your hands on cleaning some things.

4. Candy food poisoning - A recent food poisoning outbreak


from a batch of candy sent nearly 2,000 children to the
hospital in the Philippines. Nearly all of the children that
were affected by the poisoning have recovered. Health
Secretary Janette Garin indicated that preliminary lab
results found that human skin and hair were likely the
source of contamination in the candy. The contamination
could be because the candy makers did not wash their
hands or did not wear proper gear, such as gloves and
hairnets, and as a result sweat and hair follicles dripped
into the candy ingredients. Garin also noted that further
tests had to be done to check for the presence of
pesticides and toxic chemical.
Solution :
 Clean. Wash your hands and work surfaces before, during, and
after preparing food. ...
 Separate. Separate raw meat, poultry, seafood, and eggs from
ready-to-eat foods. ...
 Cook. Cook food to the right internal temperature to kill harmful
bacteria. 

5. Restaurant food poisoning - Unfortunately, businesses


such as restaurants, grocery stores, or food product
manufacturers do not always follow these regulations,
and this can result in serious cases of food poisoning.
Recently, approximately 40 people claimed to have food
poisoning after eating at an Arby's restaurant in
Springfield, Illinois. Starting on February 15, 2021, the
Sangamon County health department began receiving
reports that people who had eaten at the restaurant had
become ill. Over the following days, 40 cases were
reported, causing the restaurant to shut down. After a
deep cleaning, the Arby’s has reopened. An investigation
is being performed, but the source of the foodborne
illness has not yet been identified.
Solution:
 Clean. Wash your hands and work surfaces before, during, and after
preparing food. ...

6. (Salmonella) In October 1994, 19 Filipino professional
staff of a large company in Damman city were
hospitalized with acute febrile gastroenteritis. All ate
three daily meals at the company cafeteria. A case-control
investigation was begun to determine the cause of the
outbreak. We searched the compound for any resident
with a diarrhoeal illness. Both cases and controls were
asked where and when foods were eaten during the three
days before onset. Stool cultures were done for all
patients and all 25 kitchen employees. Food cooking,
handling and storage procedures were reviewed.

Solution: Proper food handling is key in preventing food to be


contaminated with any harmful bacteria; Ensure that your food
is cooked well. Avoid consuming high-risk food such as raw or
lightly cooked eggs, undercooked meat or poultry and
unpasteurized milk.

7. (Sepsis) At least one villager died and 53 others were


taken will after eating “double dead" meat during a wake
in the remote upland town of Suyo in Ilocos province,
police and health officials were told. Sr. Supt. Virgilio
Fabros, Ilocos Sur police director, said the lone fatality
was identified as Dominguez Daplian, 36, of sitio Dadtoco
in barangay Man-atong. Daplian was said to have died of
dehydration following a diarrhea attack. Fabros said the
victims were from the sitios of Baudan, Banata, Dadtuco,
Mantayao and Tegteggamat, all in barangay Man-atong;
and the sitios of Indadangan and Kinapian in Suyo proper.
Municipal officials initially reported the illness as
diarrhea and that the victims were being treated at the
local Rural Health Unit and in nearby hospitals. Dr.
Eugene Dauz, head of the Tagudin District Hospital, had
confirmed that the patients were victims of food
poisoning. Officials quoted some of the victims as saying
that they started vomiting and had loose bowel shortly
after eating pork during a wake in sitio Dadtuko. Fabros
said a joint team of policemen and Suyo RHU led by Dr.
Mary Concepcion with town mayor Elpidio Bistoyong had
gone to investigate to the affected villages and render
first aid treatment.

Solution: Immediately dispose a hog if it died from a


disease, even if it looks fitting for consumption it still
doesn’t pass the necessary sanitary standards.
Do not attempt to cook meat when it is visibly pale in
color, or even if it has a slight hint of greenish tint and
sticky consistency. Dispose immediately if it’s already
rancid.
8. (Amoebiasis).The number of patients who suffered from
food poisoning in Sta. Barbara, Iloilo has increased. Based
on records, 85 individuals were brought to the Western
Visayas Sanitarium for medical treatmaent. Of this
number, 35 were admitted. According to Dr.Gemma Suelo
of the Western Visayas Sanitarium, fecalysis results
revealed that 30 of the admitted patients suffered from
amoebiasis. Authorities are investagiting whether there
was also water contamination which could have caused
the food poisoning. The doctors have also taken samples
to be sent to the Food and Drug Administration. The
patients fell ill on Monday after eating spaghetti, fried
chicken, and salad during a birthday party in the town of
Sta. Barbara on Sunday.
 Solution: Avoid eating contaminated food, properly practice
safety food handling.

 Avoid drinking water that is not properly treated to kill germs,


unfiltered and dirty water.

9. (Paralytic Shellfish Poisoning) Two persons died while 20


others fell ill after eating “tahong” (green mussel)
harvested from Cambatutay Bay in Samar province that
were found to be positive of the red tide toxin. Junbert
Malabusa, 3, resident of Barangay Gallego, Taranganan
town, died on July 1 while confined at the municipal
hospital. His grandfather, Elpidio, 50, died the following
day in the same hospital, said Samar provincial
agriculturist Anita Taran. She said the boy’s parents–
Giovanni, 34, and Mary Grace, 35–and 16 other residents
from Barangay Gallego and two from the neighboring
barangay of Bahay, were hospitalized after eating tahong
gathered from Cambatutay Bay. Some of the victims were
brought to the Taranganan municipal hospital while
others were confined at the Samar Provincial Hospital in
Catbalogan City. They are now out of danger, said Taran.
The victims suffered dizziness, a tingling sensation in
their fingers, lips and tongue after eating the mussels.
Cambatutay Bay is the major body of water of Tarangnan,
36 kilometers away from the provincial capital of
Catbalogan City.

Solution:

 Follow local guidance when consuming harvested fish or


shellfish.
 Avoid eating large reef fish

10. Improper Cleaning of Food Equipment.

Solution: Have a heat or chemicals, or other processes


applied to them so that the microorganisms on the
surface or utensil is reduced to a level; always wash the
equipment to avoid bacteri
