perfect vanilla cupcakes

4.5 cups cake flour (important!)


2 tsp baking powder
1 tsp salt
(splash of nutmeg, optional)
1 stick unsalted butter, room temp
1 cup sugar
1 egg
1 cup whole milk

preheat oven to 375.

whisk dry ingredients, set aside. cream butter and sugar until fluffy and light (4 mins).
beat in egg. add dry ingredients in 3 additions, alternating with milk in 2 additions.
divide batter among cups and bake for 10 mins, rotate pan, and bake for another 10
mins. transfer to rack. frost with buttercream. eat voraciously.

buttercream frosting

3 cups powdered sugar


1/5 sticks butter (1 unsalted, half salted, or something iteration of that)
1 tsp vanilla
3-5 tsp heavy cream (more or less depending on consistancy)

beat with mixers. frost cupcakes (or cake or your face). eat voraciously.
