1. How does your determination of the isoelectric point of casein compare with that reported in the
literature?
_________The isoelectric point is nearly equal to the pH value at which the protein is least soluble. When
acid was added to the acidic milk, the solution became less acidic and turned neutral. As a result, the

2. What property of protein at isoelectric point does this experiment illustrate?


_______The property that this experiment illustrates is the Solubility Property of proteins. The solubility
of most proteins in aqueous solutions is accountable for the hydrophilic interaction between the polar
molecules of water and the ionized groups of protein molecules. The reagents that alter the dielectric
constant or ionic strength of an aqueous solution are likely to affect the solubility of proteins, resulting
in turbidity. In most cases, the alteration of the pH under a given set of conditions is sufficient to affect
isoelectric precipitation. The influence of the pH affects the solubility of protein as seen at the isoelectric
