The different cheeses that are available, range from soft cheese to hard cheese.  I've What are some really good brands of cheese in

1) Paneer or Cottage cheese-


No doubt the most popular cheese in India. It is made by coagulating warm milk with
an acid like lime juice or vinegar. It's set hard by removing maximum moisture and
retain their shape upon cooking.

2) Ricotta cheese-
Process of coagulation is same as cottage cheese but instead of just milk we use a
mixture of milk and cream. Once it coagulates, it is put in netted moulds where the
excess water is removed completely. It's soft set. Used widely in the filling for raviolis,
ricotta cakes and I like to use it in my salads.

3) Mozzarella-
Traditional mozzarella is made by adding rennet and lime juice to warm Buffalo milk
and it is allowed to coagulate. Then the coagulated part is pulled together and
stretched and made into small balls and added to cold water.

Cheddar cheese is a hard off white, yellow-orangish cheese which is sharp to taste. It
originated in the British village of Cheddar.

content. Known for it's use in cream cheese frosting and also baked dishes. Use
brand like Philadelphia for great result. Again, it's expensive but great.
