Review of Related Literature and Studies

This chapter includes the review of related literature and

studies are several sources of information and ideas that helped

enhance the knowledge of the researcher on how other things and

phenomena are associated to the concern of this developmental

study. Thus, these would supplement and complement to the

findings of this developmental study.

Local Literature

According to Katrina Escalona (2017), on her blog “No animal

part goes to waste”, Filipinos don’t like wasting food and are

ingenious when it comes to making sure no animal body part goes

to waste when cooking up a dish. Don’t be surprised to find

entrails mixed into several Filipino dishes.

According to Elena Peña (2019), columnist writer of

Philippine Star Newspaper states that the use of animal entrails

as food ingredients is a practice that is not exclusive to the

Philippines. People in many other countries do it too. The

practice springs either from utter scarcity or from sheer

creativity, or from both. Filipinos are sure to be among the more

‘serious’ users of animal entrails in food. The practice is not

even limited to entrails anymore. Nowadays, for example, there’s


hardly any part of the pig or cattle, fish or chicken that

Filipinos don’t have food use for. Various recipes can be made

from pork, beef, fish entrails, as well as from chicken. These

are often made into “paklay” or “kilawin.” Or these are made into

“bopis.”
