CHAPTER I

The Problem and Its Background

Introduction

This study aims to understand the status of bread and

pastry business in General Mariano Alvarez in which it

includes all the factors and strategies that can affect the

demand of their customers. Researchers will conduct some

surveys in every bakery shop that they can found in order to

fulfill the information that they need by this research. The

strategies of entrepreneur, labor, skills and building long

term relationship with customers will also explained by this

research. We all know that pandemic really affects the

businesses like the bake shops and pastry shop because of

low manufacturing of their products. Bread and pastry

business is not too essential in this kind of pandemic

because people think of what they really need in daily

living. The purpose of this research is to know the status

of bakery shops and how they can think possible and

effective strategies to overcome those kind of struggle in

facing the pandemic. The research will show the strength and

weaknesses of this business on how they can continually

stands to the business that they have.

Rationale of the Study

The reason behind in creating this research is because the

researcher wants to know the capability of the business on

how they handle the situation in this kind of pandemic. This

research study will help the researchers and other people

who wants to go in a business in this time of pandemic to

apply information that the researcher will going to gather

about. They can also apply the learning that they will know

in the following subjects like: Management, marketing,

finance, accounting, social responsibilities, and good

governance and all the other subjects that they can relate

by this study.

Theoretical Framework

This study is based on the study of Torahiko Hayashi, a

young baker who also had trained as an engineer, became

concerned about the growing scarcity of foods that once

defined the country’s centuries-old culture. Chief among

these was manjyu, a sweet confectionery-style dumpling

stuffed with bean paste. It required considerable skill and

long apprenticeship training to make by hand.In 1961, Mr.

Hayashi invented a mechanical method for encrusting one

material around another, replacing six manual processes with

one automatic step. The Cornucopia encrusting machine that

he patented not only saved manjyu in Japan, but also enabled

automated production of traditional handmade foods

worldwide: arancini, coxinha, croquettes, kubba, moon cakes,

pierogies, Scotch eggs, Chinese steamed buns and tamales,

among others. This technology also ignited the US “cookie

wars” of the mid-1980s when P&G adopted it to produce Duncan

Hines soft-centered cookies, a breakthrough product.

Altogether, he received more than 100 patents covering

inventions in dough processing.

Mr. Hayashi opened Japan’s Institute for Rheology in

the 1950s to teach and promote his rheology-based methods.

In 1963, he founded Rheon Automatic Machinery Co., Ltd., to

manufacture bakery machinery based on his inventions. He

took the company’s name from the word rheology.

As the researchers gathered theories related into the

study about status of bread and patry business. This theory

is about how does bakery shop will manage their business

sucessfully. This theory serve as an open up to those bakery

shops and owners about handling a way better production and

management of their bread and pastry businesses.

This will help them to gain insights about perseverance and

hardwork about building a way better bread and manufacturing

business.

PROGRAM

Frame 1

It refers to the data and materials used by the

researchers. The researchers use questionnaire as an

instrument to know the profile of the entrepreneur or

respondents and the profile of their business. The

questionanaire also ask the distinct characteristics and

strategies of the entrepreneur to his success.

The process demonstrate the series of steps taken in

order to achieve the output. The process involved in the

study, which gathering the data, creating a survey

questionnaire in google form, distribute the link to the

entrepreneur. And compiling, analyzing and interpreting the

gathered data.

Scope and limitation

The study will only happen inside the community of

General Mariano Alvarez, Cavite and conduct about the status

of Bread and Pastry Business. The reasearcher are about to

collect information or responses on the selected

entrepreneurs of bread and pastry business only.

Entrepreneurs of the said business are about to share their

experience and difficulties having this kind of business and

what strategies they're preparing for them to compete other

business owner. Atleast 25 reponses out of 50 are about to

collect by the researchers through the use of google form or

personal interview only if allowed.

This study will undertaken to find out the status of

Bread and Pastry Businesses in GMA, Cavite that will give

idea for the business owner of what entrepreneurship program

they take in. The study will benefit the following below.

The Entrepreneurs

They will benefit the said study for it will give them

knowledge of what and how the bread and pastry work out on

demand, sales in the area of study conducted.

Consumers

It will benefit them in terms of acknowledging the work of

their own community, they will help to improve the sales of

this various bread and pastry entrepreneurs.

Government

The study will provide and give information that will help

to encourage the Government in giving opportunities or

programs that will help the bread and pastry owner on their

career and business. Government is important to support its

local entrepreneur.

As soon as this study is approved the incoming researchers

can use this study as their reference on their future thesis

or research. The study will give them enough ideas to

support and provide the information they needed.

Definition of terms

Baker-the one who is assigned to produce bread and pastry

and have the experience in baking

Bread and Pastry-making bread and cakes by an experienced

and licensed baker or pastrier.

Business- once entering this field an entrepreneur should

prepare himself/herself physically and mentally if he/she is

eligible enough to handle any kind of business

Consumers- the one who buy goods or bread and pastry

Demand- it shows if the output are in demand or top in sales

Economy- the entrepreneurs give a good impact to economy if

their business succeeded and consumers patronize it.

Entrepreneurship Program- provide training for students,

faculty, researchers and business leaders to drive positive,

disruptive change to society by building scalable

enterprises.

Supply-the outputs of what consumers buy

Profit- this is what entrepreneur gains if they handle their

business well

Status-know how well or bad is a situation of certain

business

Stability- if the owner of the said business manage the shop

continously

Sustainability-if the entrepreneur maintain the good sales

and continue good things in business there is what we called

sustainability.

Workers-the people who give their best work to make an
