1. DOUGH: Combine all ingredients, mixing them gently just until they are blended
together – enough to be able to press the dough into the bottom of the pie plate and up the
sides. Do NOT overwork.
2. FILLING: Beat egg whites until stiff. In another bowl, mix cottage cheese with sugar,
vanilla and lemon zest until smooth. Add flour and mix until incorporated. Fold in beaten
egg whites.
3. ASSEMBLE: Devide the dough in half. Roll out the dough. Press the dough into the
bottom of the pan (6 cups volume) and up the sides. Spoon in cheese filling. Cover with
the top crust.
4. Bake at 190 (375 F) for about 30 minutes or until the crust is golden.
