PLACE
It is the point where products are made available to customers. A business has to decide

on the most cost- effective way to make their products easily available to customers. This

involves selecting the best channel of distribution.

TYPE OF DISTRIBUTION CHANNEL

PRODUCER RETAILER CONSUMERS

A distribution channel is a chain of businesses or intermediaries through which a good or

service passes until it reaches the final buyer or the end consumer. Distribution channels

can include wholesalers, retailers, distributors, and even the internet. Retailers are

companies in the channel that focuses on selling directly to consumers. You are likely to

participate in the retail channel almost every day. Retail channel is different from the

direct channel in that the retailer doesn’t produce the product. The retailer markets and

sells goods on behalf of the producer. For consumers, retailers provide tremendous
contact efficiency by creating one location where many products can be purchased.

Retailers may sell products in a store, online, in a kiosk, or on your doorstep. The

emphasis is not the specific location but on selling directly to the consumer.

BUSINESS AND PLANT LOCATION

Plant location refers to the choice of region and the selection of a particular site for

setting up a business or factory. Location influences plant layout facilities needed, capital

investment and operating costs. Location decisions are strategic, long-term and non-

repetitive in nature.

PLANT SIZE AND LAYOUT (BLUE PRINT DESIGN)

Plant layout is the arrangement of machines, work areas and service areas within a

factory. It involves the development of physical relationship among building, equipment

and production operations, which will enable the manufacturing process to be carried on

efficiently.
PROMOTION

Promotion is any communication that attempts to influence people to buy products or

services. Businesses generally promote their brand, products, and services by identifying

a target audience and finding ways to bring their message to that audience.

COMPETITIVE ANALYSIS

A competitive analysis is the process of categorizing and evaluating your competitors to

understand their strengths and weaknesses in comparison to your own. In other words,

it’s not a complicated idea. It’s common knowledge that the better you understand your

competitors, the better chance you have beating them.

CHAPTER II

REVIEW OF RELATED LITERATURE

Blueberry

Fresh blueberry are a popular summer treat. They have a sweet flavor, and they

are succulent and nutritious. Blueberries can be eaten freshly picked or incorporated into

a variety of recipes. They can also be purchased frozen. They have been shown to protect

against heart disease and cancer, and can also help maintain bone strength, mental health,

and healthful blood pressure. (Ware, M. et al., 2017).

Aratiles

Diabetic patients are usually scared of eating fruits due to the sucrose content in

it. But, there is one fruit that can also cure diabetes. This red color fruit is known as a

small apple or aratiles. The aratiles fruit in other countries is also known as Kerson’s

fruit, Jamaican cherry, Panama berry, Singapore cherry, bolaina yamanaza, cacaniqua,

capulin Blanco, nigua, Dieguito, memizo, or memiso. Its scientific name is “Muntingia

calabura”. Jamaican cherry, known as “Aratiles” in the Philippines, is a cure for diabetes.

Maria Isabel Layson, a student from Iloilo National High School discovered that the

Jamaican cherry has anti-diabetic properties that could cure Type II diabetes. In certain

areas of the Philippines these little red fruits are known as manzanitas or small apples.
What researchers and nutritionists are now finding is that so many other “unknown”

fruits have some amazing health benefits. (Dania, K. 2020).

Dragon Fruit

Dragon fruit is a food that grows on a climbing cactus called hylocereus, which

you’ll find in tropical regions around the world. The plant’s names comes from the Greek

word “hyle”, which means “woody”, and the Latin word “cereus”, which means

“waxen”. It has many potential health benefits including it’s rich in antioxidants like

flavonoids, phenolic acid, and betacyanin. These natural substances protect your cells

from damage by free radicals-molecules that can lead to diseases like cancer and

premature aging. It may help lower your blood sugar. Researchers say this might be

partly because it replaces damaged cells in your pancreas that make insulin, the hormone

that helps your body break down sugar. But the studies were done on mice, not people.

It’s unclear just how much dragon fruit you’d have to eat to get these benefits. (Watson,

S. 2020).

Malunggay

Moringa oleifera, is a plant that has been praised for its health benefits for

thousands of years. It is very rich in healthy antioxidants and bioactive plant compounds.

So far, scientists have only investigated a fraction of the many reputed health benefits.

Moringa oleifera is very nutritious, rich in antioxidants, may lower blood sugar levels,

may reduce inflammation, can lower cholesterol and may protect against arsenic toxicity.

(Arnarson, A. et al., 2018).

Avocado
Avocado is the fruit of the avocado tree, scientifically known as Persea

Americana. This fruit is prized for its high nutrient value and is added to various dishes

due to its good flavor and rich texture. It is the main ingredient in guacamole. These days,

the avocado has become an incredibly popular food among health-conscious individuals.

It’s often referred to as superfood, which is not surprising given its health properties.

(Gunnars, K. et al., 2018).

Local Literature

Nutritional and textural studies on dietary fiber-enriched muffins and biscuits from

cassava-based composite flours

The study focuses on the use of cassava flour for making two baked goods viz.,

muffins and biscuits. The nutritional and functional properties of cassava flour were

modified through malting and pregelatinization and further by blending with cereal

and/or legume flour and bran sources. The composite flours that have a high protein

content and dietary fiber (DF) content were further enriched through the addition of

wheat bran at levels of 10.0 g per formula. The products developed had high DF content

of 2.77-3.44% and protein content of 4.50-5.60% (dwb). The low in vitro starch

digestibility of muffins and biscuits from cassava-bran blends was an additional

advantage, suggesting their use in medical nutrition therapy for treating obese and

diabetic people as well as for management of cardiovascular and intestinal problems.

(Jisha, S. et al., 2010).

Influence of water chestnut (Trapa natans) on chemical, rheological, sensory and

nutritional characteristics of muffins

Water chestnut flour (WCF) was utilized in the formulation of muffins. Blends

were prepared by replacing 25, 35, 45 and 55% of wheat flour with WCF. Farinograph

characteristics of the blends showed that with increase in the level of WCF there was a

decrease in the dough stability and increase in mixing tolerance index, indicating

weakening of the dough in comparison to control. Pasting characteristics indicated

increase in gelatinization temperature and peak viscosity of the blends. Micrographs of

muffin crumb prepared by incorporating WCF showed gelatinized starch granules

embedded in the disrupted protein matrix. The lightness value of muffin crumb and

sensory scores for crust color, shape, crumb color, grain and texture decrease with

increase in the level of WCF in muffins when compared to control. However the 55%

WCF incorporated muffins received significantly lower scores for overall quality.

Incorporation of WCF at 45% level produced muffins of acceptable quality. (Krishnaiya,

R. et al., 2015).

Extruded flour as techno-functional ingredient in muffins with berry pomace

Blackcurrrant pomace is a by-product from fruit juice production, which is rich

in polyphenols and dietary fiber. When added to bakery products, its high fiber content

has detrimental effects on dough/batter viscosity and on the texture and the structure of

the final product. In this study, the wheat flour extruded at different temperatures was

used to replace 50% of wheat flour in muffin formulation to counteract these detrimental

effects. In addition, the effect of blackcurrant on the glucose release during in vitro

digestion was analyzed. The extrusion treatment of the flour caused a disruption of the

starch granules, and affected starch characteristics such as water binding capacity and

swelling. Its incorporation in muffins did not produce important differences in texture,
nor in consumer acceptance, compared to a standard formulation. Moreover, the addition

of blackcurrant counteracted the hyperglycemic effect of pre-gelatinized starch.

Alchero Banana Muffin

Located in Bucal, Calamba City, Alchero Banana Muffin Enterprise produced

banana muffins in two flavors, banana-mango and banana-pineapple and these muffins

were marketed to the college students of Letran Calamba. The business aimed to be

known in the food industry as the best banana muffin producer that satisfies and

nourishes its customers. In terms of quality and price, the product as feasible and

profitable.

Survey results showed that there was adequate demand for the product in the

market. The business, from preparation which included the acquisition of materials and

equipment, and registration to actual operation, took four months. With the initial

investment of P 28,163.00, it earned a net income of P5,348.00. Through social media

sites, flyers and word of mouth, the product was promoted to potential customers. The

business was in the form of a sole proprietorship which was composed of three owners

contributing equally to the capital of the business. (Dela Guardia, C. et al., 2016).

Blueberry Muffins

It is one of the best muffin varieties that you should try. Muffins refer to breads

that are baked in small quantities. The dough is often placed in paper cups and baked in

muffin or cupcake pans. This blueberry recipe is one of the easiest that you can prepare

anytime. Blueberry muffin or any muffin variety can sometimes be mistaken as cupcakes.

Muffins and cupcakes are two different things. Muffins are less sweeter and it does not
have any frosting. Probably it is one of the simplest recipe around and I am confident to

say that anyone with or without experience in baking can make their own blueberry

muffin just by following the details described in this recipe. I know that baking can be

intimidating to most people. Don’t be afraid to try. As long as you have the will and the

correct guidance, you should be fine. (Merano, V. 2009).

Growing Local: Wild Maine Blueberry Muffins

The documentary project Growing Local seeks to raise awareness across cultures

of the importance of supporting locally produced foods. Growing local travels to places

such as Maine, USA, and Yorkshire, England, where it examines traditional but popular

recipes and adapts them using only local ingredients. Through still photography, ambient

sound, and audio interviews, each volume of the series documents not only the creation

of the adapted recipe, but also traces the ingredients’ origins, the history of the recipe,

and researches the current status of the region’s local food movement. By documenting

the efforts of small, local food producers, Growing Local hopes to shift the public

attention back to the necessity of supporting one’s neighbors (instead of huge

corporations). The ingredients connects us with the lives of the producers. Growing Local

has the potential to attract a global audience and convey the importance of supporting

local foods to strengthen local economies. Growing Local will be made available for

public presentations in various iterations-on DVD, as an enhance e-book, printer book

with accompanying DVD, delivered via the Web and traditional broadcasting methods
and more. In 2007, 1 began researching the first volume of the series: Growing Local:

Wild Maine Blueberry Muffins. In this volume I created and documented an award-

winning wild Maine blueberry muffin recipe that consisted of ingredients grown and

harvested solely in the state of Maine. In one of the segments, the multimedia piece Wild

Maine Blueberries, we meet the growers of the blueberries used in the muffin recipe,

Jennifer Smith-Mayo and Matthew Mayo of Blue Hill, Maine. This multimedia segment

was presented at the University of Maine 2008 Graduated Research Expo and won

Second Place for Outstanding Multimedia/Art Presentations. In 2010, the multimedia

segment Maine: The State of Local Foods and its companion paper that examines the

local foods movement in Maine won the Maine Studies Graduate Award for Research

and Creativity. For this thesis project I am presenting a DVD (in POCKET) with a

selection of multimedia segments from Growing Local: Wild Maine Blueberry Muffins,

which include: Introduction; Wild Maine Blueberries’, Butter; Milk & Eggs; and Maine:

The State of Local Foods. The award-winning paper, Maine: The State of Local Foods,

also accompanies this reflection paper to provide further context on why I believe that

Maine, by its own example, is leading the nation toward a more vibrant and self-

sustaining local foods economy. (Smith-Mayo, J. 2011).

Blueberry Muffin Application Research

For this study, eggs were reduced and/or removed from peak-top blueberry muffin

formulas made with a crème cake muffin base and replaced with commercial egg replacer

products at the manufacturer’s suggested rate. The samples were evaluated quantitatively

in commonly used cake analytical tests and then qualitatively in organoleptic tests.

Sensory panelists unanimously preferred the Control to the Test Formulas. Overall, not a
single product performed as well as or better than real eggs, but a fiber-based egg

replacer came closest. The lowest performer was a whole algal flour egg replacer, which

suffered from an excessive yellow color, weak texture, and off flavors. Except for batter

specific gravity and muffin height, all other areas of muffin quality were affected,

especially flavor and texture. Other products including starch, soy, whey protein

concentrate and wheat-based products did provide some functionality to muffin formulas,

but did not meet or exceed the Control organoleptically in acceptability. To fully assess

egg replacers, manufacturers must test them on the bench and spend time optimizing

formulas for acceptable results. (Maloberti, E. 2021).

Development of Muffins from Wheat Flour and Coconut Flour using Honey as a

Sweetener

Coconut flour is an excellent source of unique taste and aroma and rich in

vitamins, minerals and dietary fibers, which might have potential application in baking

products and human nutrition. The study is aimed to investigate the effect of honey and

different levels of coconut flour on muffins. Four types of muffins such as, T1 -0%, T2

-5%, T3 -15% and T4 -25% of coconut flour incorporation were investigated and T4 is

found more acceptable in terms of physicochemical properties of muffins. T4 muffins

secured the highest score in color, texture and overall acceptability. The results showed

that the addition of 25% coconut flour to the batter has improved the sensory and the

physicochemical characteristics of the samples of the muffins obtained, and increased

their nutritional value. (Shivanna, A. et al., 2020).

Sensory and Physical Properties of Muffins Made with Waxy Whole Wheat Flour
The quality of muffins made with different amounts (0, 15, 30, 45 and 60%) of

waxy whole wheat flour (WWWF) blended with conventional whole wheat flour were

characterized. High amounts of WWWF blends produced darker but acceptable crust

color. WWWF formulations had a softer crumb on day 0 and day 4, but greater firmness

after 16 days storage. Samples did not differ in springiness on day 0, but a slight decrease

occurred in all samples, and WWWF samples were slightly less springy after 16 days.

Proton (1H) NMR showed two distinct relaxation times, indicative of water migration

from the crumb of the muffin to the crust. Sensory evaluation showed high overall

likability, except for muffins made with 60% WWWF. The 60% muffins had lower

volume than all other formulations. Results shows that 15-30% WWWF produces a

softer, moister muffin, but this advantage is lost after 8-16 days storage. This study shows

that the 15-30% waxy whole wheat flour blended with conventional whole wheat flour

produces softer and moisture whole wheat muffins, with good consumer acceptability.

Muffins with WWWF remained softer for 4-8 days, but were firmer than control after 16

days storage. Waxy whole wheat flour also adds additional fiber, so its inclusion in

blends with conventional whole wheat may help in the development of higher fiber

products with softer and moister crumb. (Acosta, K. et al., 2011).

Baking and sensory quality of germinated and ungerminated flaxseed muffins

prepared from wheat flour and wheat atta

Present study was focused on development of muffins from germinated and

ungerminated flaxseed meal which is used as dietary supplement due to its functional and

nutritional benefits on human health. Germination of flaxseed enhanced its health

benefits. Different combinations were made by adding of ungerminated and germinated

flaxseed meal in wheat flour and atta. It showed increase in the dough development time

and water absorption for both ungerminated and germinated flaxseed meal. Wheat flour

and wheat atta muffins were prepared after addition of flaxseed meal at 5, 10, 15, 20, 25

and 30% levels. With increased levels of flaxseed, there was improvement in specific

volume of muffins and texture. The 15% for ungerminated and 10% for germinated

flaxseed meal were selected as best level on the basis of organoleptic sores and textural

properties. Prepared muffins were packed in LLDPE and stored under room and

refrigerated conditions for 1 month to assess the shelf life from the best levels. Muffins

stored well for 15 days under ambient conditions and for 1 month under refrigerated

conditions. (Kaur, A. et al., (2018).

CHAPTER III

RESEARCH DESIGN AND METHODOLOGY

Type of Research/Research design

The researchers used focus grouped discussion research design in the

collection of data since it allows extracting meaningful insights and opinions and

making an accurate presentation of a group. The focus group discussion, according

to Question Pro, possesses a distinct advantage over other market research

methods. They capitalize on the moderator’s communication with participants and

the flexibility to move the discussion. The purpose of the group is not to arrive at a

consensus or agreement on the topic. Instead, it seeks to identify and understand

customer perceptions of a brand, product, or service.

The Respondents

The respondents of this study being survey are based on the availability of people who

can answer the survey. We had 120 respondents being used as a sample for our study, the
researchers conducted a survey through the use of Google Form and disseminate to each

Facebook friends or messenger. The sample was diverse with regards their age, gender,

status, occupation, and address. This entire variable may impact or affect the respondents

respond or answer.
