CHAPTER I

INTRODUCTION

BACKGROUND OF THE STUDY

Pineapple ‘Ananas Comosus L. Merr’ belongs to the family


Bromeliaceae. It is known as the queen of fruits because of its
excellent flavor and taste. According to the Ubi et at ‘2005’, the
pineapple plants are drought tolerant and well adopted to the
tropical sandy soil which pH ranging from 4 5 to 6 5. The plants
are propagated from suckers or from the crown which grow on top
of fruit it is one of the most important commercial fruit crop in the
available throughout the year.

The fruit are used manly for fresh consumption fruit


juice and candy, while in some parts of the world the fermented
juice is use to make vinegar and alcoholic spirit.

Pineapple contains bromelin, an enzyme that may


help arthritis pain by easing inflammation. They are also good
source of vitamin C, which can help our immune system.
Pineapple help benefits, it can immune system support, bone
strength, eye health.
Pineapple can help reduce the risk of macular degeneration, a disease
that affects the eyes as people age, due in apart to its high amount of
vitamin C and the antioxidants it contains.

We do process it to make the pineapple candy because


pineapple has vitamins that will help our body healthy .

The pineapple fruit must be good source of vitamin A


and B and rich vitamin C. It contain enzyme, bromelin and pineapple
leaf was a good source of chlorophyll. The quality of pineapple largely
depends on the amount of sugar depends on the ripeness of fruit, also
in the variety, soil condition and climatic condition. Pineapple does not
increase in sweetness after it is harvested.

Candy is a sweet food prepared from fruit and fruits and


vegetables by impregnating then which sugar syrup followed by
dreaming of excessive syrup and then drying the product to a shelf
stable plate.

Further, attribute to least commercial in involvement,


the pineapple is still to be used in process industries. And also there
are huge requirement for this type of product from the stand point of
health and nutrition.
OBJECTIVES OF THE STUDY

The study primarily aimed to determine the


acceptability of pineapple candy to the BSIT students at Naval State
University

Specially, it sought to

1. Determine the profile of the processing BSIT students in terms of

2. Find out the acceptability of pineapple candy in terms of
