Purpose This document represents the main assessment instrument for the unit of
competency SITXWHS003 – Implement and monitor work health and safety
practices
Unit description This unit describes the performance outcomes, skills and knowledge
required to implement predetermined work health and safety practices
designed, at management level, to ensure a safe workplace. It requires the
ability to monitor safe work practices and coordinate consultative
arrangements, risk assessments, work health and safety training, and the
maintenance of records.
The unit applies to all tourism, travel, hospitality and event sectors and
to any small, medium or large organisation.
This unit incorporates the requirement, under state and territory work
health and safety (WHS) legislation, for businesses to take a systematic
approach to managing the safety of their workers and anyone else in the
workplace.

Academic Where a student wishes to appeal an assessment they are required

assessor may decide to re-assess the student to ensure a fair and

written report regarding the re-assessment outlining the reasons why
assessment was or was not granted.

receiving the results using the form 10.1 for Complaints and appeals
outlining the reasons for the appeal. They shall lodge this with
student administrations department and the appeal shall be entered
into the ‘complaints and appeals register’.
The Course coordinator shall be notified and shall seek details from
the assessor involved and any other relevant parties. A decision shall
be made regarding the appeal either indicating the assessment
decision stands or details of a possible re-assessment by another
assessor appointed by Acumen.
The student shall be notified in writing of the outcome with reasons for
the decision. The student shall also be provided the option of activating
the external appeals process if they are not satisfied with the outcome.
The student is required to notify Acumen if they wish to proceed with
the
external appeals process.
Reassessment 1. Student will be assessed as being competent only upon satisfactory
process completion of all the assessments in a unit.
2. If a student is not able to demonstrate satisfactory completion of all
of the required assessments of the unit, the result for that unit will
be recorded as Not Competent.
3. If a student has submitted all the tasks and successfully completed
more than 50%* of the assessment tasks for a unit, they will be
provided with specific feedback and invited to re-submit their
assessment.
4. If a student has submitted and not successfully completed more than
50%* of the assessment tasks for a unit, they will be required to
undertake the unit again.
5. In the case of re-submission, the following actions shall occur:

Scenario
You are a chef in Pesto, a busy restaurant.
This morning, at 10:35 am, there was fire in the kitchen. The reason was the restaurant had
not followed the cleaning schedule of the deep fryer. This had resulted in grease build-up
in the hoods and ducts. When the grease caught fire, the fire spread swiftly throughout the
kitchen.
The kitchen exhaust had also not been maintained according to schedule. You had been
asking for a regular kitchen filter cleaning service, but that wasn’t implemented, which caused
the exhaust to work poorly. As a result, the kitchen filled up with smoke. One cook on
your team, John, suffered minor burns and smoke inhalation.
The fire was put out, and John was taken to a local hospital. John’s condition is not severe and
his doctors believe he can go home soon.
The kitchen however, is a mess. Two stoves need repairs, the walls need to be cleaned
and repainted, all food needs to be removed, and electrical wiring needs to be checked.
Most importantly, the restaurant needs to take measures to prevent such incidents in the
future. The fire was the direct result of the staff not following their WHS responsibilities.
You think that cleaning procedures need to be reinforced. You also think additional or
refresher WHS training for staff is necessary.
This is a point you have been trying to raise with the owner of the restaurant, but it has always
been pushed to the back burner.
After the fire, you think it is even more important for the owner to immediately action

Scenario
You have been appointed as the new manager of Pesto’s Restaurant. Your team consists
of four part-time front of house staff on a roster, two full time kitchen staff, and two part-
time kitchen staff on roster.
You have decided to conduct an information and training session to ensure your staff are
aware of their rights and responsibilities when it comes to WHS.
To assist with the session, you have decided to develop three information hand-outs,
which you will provide to and discuss with the staff.
You would also like to consult with your staff to identify further training needs for Work Health
and Safety, as you believe that this is a key area for training, particularly for new staff.
Task A
Develop three simple WHS information handouts to be provided to, and discussed with staff at
the information and training session.
Handout 1: Legislation The purpose of this hand-out is to clearly and simply explain
important information about legislation.
Task B
You, as the restaurant manager, are going to conduct a meeting with all staff in the
function room, to provide them with the WHS hand-outs and consult them about WHS
processes at Pesto’s Restaurant.
Prior to the meeting, you are to conduct a hazard analysis of the meeting area.
Your assessor will set up the meeting area with two simulated hazards.
You must use the hazard identification checklist included in the appendices to conduct the
inspection, and make recommendations for corrective actions.

Organise and conduct a 15 minute meeting for the purposes of providing WHS information

This is the fourth of the four assessment tasks you must complete satisfactorily to be
deemed competent in this unit.
In this task, you must participate in a role play with the assessor, based on the
scenario provided.

Scenario
Last month you had received a risk assessment notification at a catering function, in
which Matt, one of your kitchen assistants, had suffered a minor back injury as a result of
lifting milk crates without using the proper procedure.
Matt is a promising team member, but is known to be very flippant and does not take
things seriously. He has received manual handling training as part of his induction, and again
as part of the refresher training that you had organised as part of the staff WHS consultation.
This week you have once again received an incident report involving Matt. In this latest
incident, he dropped a stock pot with hot water and almost burnt his colleague. The
reason for this was failure to wear appropriate footwear to reduce the risk of slips, trips and
falls. Matt was not wearing the rubber soled work boots he must wear. Instead, he was
wearing sneakers, and tripped on his untied shoelaces, thus dropping the stockpot.
This is the second WHS related incident involving Matt. He was lucky that no one was injured
due to this. However, you are worried about this non-compliance continuing and posing a
hazard to all staff.
After the first incidence of non-compliance at the catering function, you had an informal
meeting with Matt to stress the importance of WHS compliance, and organise training for him.
However, after the second incident, you are required to formally discipline Matt.
You are aware that Matt needs further, mandatory WHS training. However, he is a part
time employee and has another part time job. This means that he cannot participate in
training during the work week. Hence, you have to find a suitable training method for him.
Observation Task
