Summer is finally here! We’ve never longed for anything more as restaurants, cafes, bars and
brasseries across Europe are gradually reopening. Customers are hungry for freedom, for sharing,
for new experiences, for escape, and for travel following the long months of confinement. The aim
of the Chocolate Academy™ is to help you offer these experiences without traveling abroad.

We are therefore by your side to prepare the most attractive summer menu that will

collaboration with the Chocolate Academy™ Chefs Dries Delanghe and Francisco
Moreira, we’ve created 12 original desserts, inspired by 12 travel profiles and the

drink, made with our latest innovation Cacao Barry™ Evocao™

Juices: 63g Beet 13g Cucumber 75g Oats


27g Pear 7g Lime 30g Agave syrup
24g Apple 13g Lemon 75g Dried fruits

250g Hazelnut milk 91g Honey

Package Sports drink

Prepare the different fruit juices with a fruit centrifuge juicer. Bring half of the hazelnut milk to a boil with the salt, agave syrup
and scraped-out vanilla bean and pour over the Cacao Barry™ Evocao™ WholeFruit Chocolate, Cacao Barry™ Cocoa Powder
Extra Brute and Cacao Barry™ Pure Paste 100% Hazelnuts. Mix with an immersion blender until a smooth emulsion is obtained.
Add the other half of the hazelnut milk and the juices while mixing. Pour the drink in the desired bottle, screw on the cap and
preserve in the fridge until needed.

Sports bar

Mix the oats together with the agave syrup and roast them in the oven at 165°c for 15 minutes, mixing from time to time. When cooled
down mix the caramelized oats together with the dried fruits. Mix together the egg whites, honey, flour, baking powder and salt and fold
this under the oats and dried fruits. Place in the fridge to rest for two hours.

After two hours, fold in the chopped chocolate and pistachios and cocoa nibs. Cast the mixture in a silicone mold and bake at 170°c for
15 minutes. Leave to cool down before unmolding. When cooled down you can dip the bottom of the bar in tempered Cacao Barry™
Evocao™ WholeFruit Chocolate.

You can use rice milk, almond milk or
