Background of The Study
Jam is famous dessert in different country, it is usually used as filling in

sandwiches or bread in eating breakfast or snacks. Palauan is a minor crops in the

Philippines it is a good source of ingredients since it can survive in climate change. In

addition it is more nutritious and beneficial.

As stated by William Schafer et al.(2018) jams are preserves and conserves fruit

products. These products differ in gel consistency, ingredients and how the fruit is

prepared. They are easy to make at home. Jams are made from crushed or ground fruit

and usually have a thick consistency due to high pectin content. Marissa Sertich Velie

(2014) said that as the mixture cooks, water evaporates and it thickens to as

spreadable consistency, though it still may have some pieces of fruit .


According to HealthBenefits Times Giant swamp taro corm (Palauan)

taste sweet vanilla, floral, and starchy. It’s major nutrients are Vitamin B6

(22.62%), Carbohydrate (21.17%),Copper (19.89%),Manganese (17.30%), and

Vitamin E (16.53%). Moreover many Amino acids 0.024 g of Tryptophan, 0.072 g

of Threonine, 0.056 g of Isoleucine, 0.115 g of Leucine and 0.07 g of Lysine are

also found in 104 gram of taro. It can also prevent cancer, reduce symptoms of

rheumatoid arthritis, blood pressure and heart health, immune system health,

decreased muscle cramping and improved muscle strength, digestive health,

enhances learning, helps maintain dental health, boosts vision, thickens hair,

help lower the chances of developing diabetes, skin health, and prevent bone

loss.
Statement Of The Problem
This study aimed to determine the acceptability, quality

characteristics and cost benefit analysis of palauan jam.

Specifically, this study sought to answer the following questions.

1.What is the acceptability of Palauan jam in terms of consumer

preferences?

2.What is the cost benefit analysis of Palauan jam?

3.Is Palauan corm suitable in making jam?


Statistical Tools
Measuring Cups Spoons- used to measure the quantity of

ingredients.

Blender- used in blending ingredients.

Sauce pot- used to cook jam.

Wooden Spoon- used to stir the jam until it reach its consistency.

Stove- used to cook jam.

Jar- used to store the jam.


Research Procedure
Ingredients:
Palauan Corm - 1\2 kg.
Condensed Milk- 1 cup
Evaporated Milk- 350 ml
Margarine – 2 tablespoons
Procedure
Margarine – 2 tablespoons

Sorting --- Removed foreign objects attached in palauan corm.

Washing/cleaning Washing/cleaning the corm and peel.

Soaking --- Soaking the corm in the water overnight to removed


- the toxin.

Draining --- Removed the corm in the water and drain them.

Boiling ---- Boil the corm until it soften.

Blending
---- Blend all the ingredients.

Cooking ----- Cook the ingredients after blending to make jam.
