ABSTRAK

Coffee is one of the most popular drink in the world. Over the years, people’s interest
in coffee kept increasing. Therefore, coffee business has still room to grow.
Indonesia is one of the biggest coffee producer and market target in the world.
However, coffee has high acidity which cause people to have dyspepsia. In
Indonesia, dyspepsia incidence rate is around 40.8% (Kurnia, 2011). It means a
majority of Indonesian have trouble consuming coffee. An alternative coffee
producing method named V60 Japanese Coffee is used to solve this case. It’s a
coffee innovation method to reduce low acidity coffee in order to increase coffee
market demand. Decaf V60 Japanese is an acid removing method from a coffee.
Based on laboratory tests, the acid and caffeine content within coffee was reduced
significantly with this method. Therefore, coffee becomes a safe drink for dyspepsia
patient through this method.
